Protein packed Chocolate Covered Strawberry Protein Popsicles are the perfect post-workout snack!

Summer heat has arrived in the mountains. Last week we were even flirting with 90 degrees a few days, which is unusual for us. I've had to start my morning run earlier and earlier to avoid the heat and I'm still coming back a super sweaty mess. The truth is though, I love it. I'll take the heat over the cold any day.
You know what else I'm loving? Chocolate Covered Strawberry Protein Popsicles...
Chocolate Covered Strawberry Protein Popsicles
I feel like I found the perfect summer post-workout snack with these babies. Can't you just imagine coming in from a gazillion degree hot and sweaty run to eat one of these?
Talk about the perfect recovery snack and a great way to cool off.
I made these Chocolate Covered Strawberry Protein Popsicles with the NEW chocolate flavored Vega® Clean Protein. Each serving of Vega Clean Protein has 25 grams of complete, premium, plant based protein from pea, hemp, alfalfa and pumpkin! Cool, huh?
Vega Clean Protein also has all the essential amino-acids AND is only 130 calories per serving. It also comes in vanilla if you aren't feeling the chocolate.

Chocolate Covered Strawberry Protein Popsicles
Ingredients
- 1 scoop Vega Clean Chocolate Protein Powder
- 1 handful frozen strawberries
- 1 ½ cups non dairy milk **
- Optional: melted chocolate, vegan friendly if dairy-free for the topping
Instructions
- Put all the ingredients in a blender and mix until smooth
- Pour the batter into popsicle molds and put in freezer. Allow to freeze for 5 hours to overnight.
- If adding the chocolate design, melt chips in the microwave in 15 second increments until liquid. Remove the protein popsicles from the molds and place on cookie sheet. Drizzle the chocolate over the popsicles and put back in freezer until firm.
