I could not sleep the other night and started plotting out new recipes for the blog and came up with this. Does anyone else lose sleep over food creations? I had a vision of the delicious peanut butter drizzled on top of bananas with just a touch of chocolate. The result was this dreamy Chunky Monkey Peanut Butter Baked oatmeal recipe that is crazy easy to make and loved by both toddlers and adults alike.
This healthy baked oatmeal is a fabulous idea because it's made with pantry staples. The final product is topped with a light peanut butter drizzle, freshly sliced banana, and if you are feeling especially wild a light sprinkle of dark chocolate chips.
Other than the chocolate, this recipe is nothing but healthy! And if you consider there is only a ¼ cup in the entire dish AND it's dark chocolate, it's not that bad of a deal.

I'm a fan of baked oatmeal because it is an easy make-ahead breakfast you can eat off of all week. My Peanut Butter Baked Oatmeal has hearty and healthy old-fashioned rolled oats, egg, peanut butter, banana, and just a touch of chocolate chips. It's topped with more goodies like fresh banana slices and a peanut butter drizzle.
If you haven't had baked oatmeal before it has the texture of a chewy and soft cookie. It's actually quite satisfying and very different from just enjoying a regular bowl of oats.
This healthy baked oatmeal is actually inspired by the famous Ben and Jerry's Chunky Monkey ice cream flavor which features peanut butter, banana, and chocolate.
Here's What You'll Need to Make It:
- Old Fashioned Oatmeal: I use regular inexpensive old-fashioned oats for this recipe. If you are gluten-free you can use gluten-free oats to make this recipe gluten-free. I prefer the old fashioned oats over quick oats because they hold their texture better when baked.
- Peanut Butter: I used regular peanut butter in this recipe. To be able to mix it into the batter melt it just slightly in the microwave.
- Banana: To get the banana flavor in the peanut butter baked oatmeal I use mashed banana like you would use when making banana bread. Use bananas that are slightly speckled and starting to brown for the sweetest results.
- Eggs: Two fresh eggs bind the oatmeal together.
- Milk: You can use whatever type of milk you prefer for this recipe. Feel free to use non-dairy milk like almond milk to make this recipe dairy-free.
- Dark Chocolate Chips: I used a few dark chocolate chips to make this dish more fun and resembling the Chunky Monkey Ice Cream flavor.
- Spices: I used vanilla extract and a nice dose of cinnamon to bring out the flavors in the oatmeal.
- Baking Ingredients: This recipe calls for both baking powder and a touch of salt to pull off the baking magic.
- Toppings: You can eat this oatmeal right out of the oven or plate it and add fun toppings like fresh banana, chocolate chips, coconut, walnuts, and a peanut butter drizzle.
How to Make Chunky Monkey Peanut Butter Baked Oatmeal:
- Preheat your oven to 375 and spray an 8x8 pan with cooking spray.
- Mix together the oatmeal, baking powder, and salt in the bowl. Add the recipe of the ingredients to the same bowl and stir it together.
- Pour the oatmeal mixture into your baking dish.
- Bake for 30-35 minutes or until a toothpick comes out clean. Allow the oatmeal to cool for about 10 minutes.
- Cut into square and serve with banana and peanut butter.
I have and love using this casserole dish with a handy lid to bake my oatmeal. It's perfect for storing the leftovers in the fridge.

Yes. You need to refrigerate this Peanut Butter Baked Oatmeal recipe. It can be stored in an airtight container in the fridge for up to 5 days. You can eat it cold or reheat it in the microwave for 20-30 seconds.
Can you freeze this recipe?
Yes! You can also freeze this recipe easily. Once it's completely cooled cut it into individual pieces and wrap each square with plastic wrap. Put the squares in an airtight container and store it in the freezer. To reheat just take the baked oatmeal square out of the freezer and microwave for 45-60 seconds until thawed out.

Chunky Monkey Peanut Butter Baked Oatmeal
Ingredients
- 2 ½ cup old fashioned oats
- ½ teaspoon salt
- 2 teaspoons cinnamon
- ¾ teaspoon baking powder
- 2 over-ripe bananas, mashed
- ¼ cup peanut butter, slighty melted
- 2 eggs, beaten
- 1 ½ cups milk of your choice
- 2 teaspoons vanilla extract
- ¼ cup mini dark chocolate chips
- Toppings: melted peanut butter, sliced bananas, dark chocolate chips
Instructions
- Preheat the oven to 375 degrees. Spray an 8x8 pan with cookign spray.
- Mix your oatmeal, baking powder and cinnamon together in a bowl.
- Add the banana, peanut butter, milk, eggs, and vanilla extract to the same bowl. Stir.
- Pour into the baking dish.
- Bake for 25-35 minutes or until toothpick comes out mostly clean. Do not overbake.
