I feel like broccoli gets a bad rep when I go to the store. I'll find myself thinking... don't get that it's boring and predictable. Go for something... well fancier.
Yes, it may be a pretty common vegetable but it really deserves a place at our table on a regular basis. It's packed with vitamin K, C, chromium, folate and fiber! Turns out that innocent broccoli is actually a regular ole' superfood in the making.
Lately I've found my way back to one of my first vegetable loves, broccoli and get over my thoughts about it being too boring. Most of the time I'll simply steam it adding salt, pepper and a little lemon at the table, but if I'm feeling extra fancy I'll make my 4 Ingredient Roasted Lemon Parmesan Broccoli.
To make my 4 Ingredient Roasted Lemon Parmesan Broccoli you just toss with a little olive oil, lemon and parmesan. Roasting brings out the natural sweetness and turns these regular ole' bites into addictive morsels of veggie goodness.
I even like the crispy edges.
Serve the 4 Ingredient Roasted Lemon Parmesan Broccoli with your favorite salmon dish (try this one!) or add it to a buddha bowl with grains and nuts.
I even like to add it as a side dish to some simple pasta on a night when that's the best I can do in the kitchen.
My family had broccoli all the time growing up, so there is something so comforting about this dish to me. It honestly tastes a little bit like home and brings my memories of family dinners growing up flooding back.
Plus, it tastes to good that an entire pan disappears in my house faster than I can say... "eat your veggies!"
Roasted Lemon Parmesan Broccoli

Roasted Lemon Parmesan Broccoli
Ingredients
- 12 ounces bag of broccoli florets, 2-3 cups of raw florets
- 1 small lemon, juiced
- ¼ cup grated parmesan cheese, divided
- 1 tablespoons olive oil
- ¼ teaspoon salt, or to taste
- ¼ teaspoon pepper, or to taste
- Cooking spray
Instructions
- Preheat the oven to 425 degrees & spray foil lined baking sheet with cooking spray.
- Break up any really large broccoli pieces so they are all about the same size.
- Toss broccoli in lemon, half the parmesan, olive oil and salt & pepper. Evenly lay on baking sheet.
- Roast in oven for 12-15 minutes or until desired tenderness. I like them a bit crunchier.
- Top with the rest of the parmesan and serve immediately.
