I am officially home again and will actually be home for 4th of July weekend this year! After five weekends of straight travel, I'm thrilled. Since life has been a little hectic lately, I think a low-key 4th of July is just what the doctor ordered.
But even with a low-key weekend, I'm going all out on the food, including this delightful Vegan Watermelon Sorbet recipe.
This delightful 4 Ingredient summer treat is so crazy simple. It's officially a "nice cream" but I think it could pass for a sorbet too.
You make my Vegan Watermelon Sorbet recipe by blending frozen watermelon, a small amount of frozen banana (for creaminess) and a splash of nondairy milk. Folding in the mint at the end takes it to a whole different level.
You can also use my beloved Yonanas Frozen Healthy Dessert Maker which does all the work for you! It is seriously one of my favorite kitchen tools.
I mentioned this last week, but I have one little tip on this recipe. When freezing the watermelon lie it in cubes on a cookie sheet and freeze flat. Once frozen, transfer the watermelon to a bag. Otherwise you might end up with one giant frozen watermelon blob that's near impossible to work with. 🙂
The recipe below is for one, but you can easily multiply it to serve at a gathering this weekend.

4 Ingredient Watermelon Mint Sorbet
Ingredients
- 2 cups frozen watermelon
- ½ frozen banana
- 1-2 tablespoons fresh mint, chopped
- splash of unsweetened almond milk
Instructions
- Allow the fruit to soften for 5-10 minutes
- Put all the ingredients in a food processor and mix until smooth.
- Also use theYonanas Machine!
- Serve immediately or smooth it flat in a container and freeze for an hour to scoop out in pretty scoops.
