Dropping in today to share 5 recipes to try this April from the Running in a Skirt recipe archives.

April is always a month full of transition in the mountains. We can still get snow early in the month but by the end, it's usually a lot more mild with plenty of days in the 70's. Personally, this month starts off super hard for my family as the Hubs is working like crazy to finish up tax season but we usually get a break at the end of the month with a trip. I love all the spring flowers that bloom this time of year that gives me feelings of hope and new beginnings. Easter even falls in April this year, which is always one of my favorite holidays.
Food wise I still enjoy some lighter soups this month and focusing on pretty new spring vegetables like asparagus. I also jump on the berry train with all the fresh, gorgeous strawberries in the stores. So for this month's recipes, I picked one lighter soup, an EASY pasta salad made fresh asparagus, tomato and pesto, a foil packet fish dinner and a crustless quiche that would be perfect for Easter morning or even a weekday dinner. Plus I put in my favorite homemade, whole wheat (but still super tasty) Strawberry Muffins.
Again, I challenge you to mix your cooking up and give these a try. These are recipes I created with care of the years and really think you will enjoy! As always I'd love to hear what you think and what you want to try in the comments.

Healthy Crock Pot Cheddar Cauliflower Soup
This soup is perfect for a cool April day! It's warm and cozy like baked potato soup but made with cauliflower instead of potatoes. The end result is a low carb soup that tastes like Potato Cheddar soup. Cauliflower is packed with vitamins and health benefits making this a delightful dish to try this month.
5 Ingredient Pesto Tortellini Salad
I'm all about meals that are made with just a handful of ingredients! This recipe starts with a package of frozen tortellini and adds fresh asparagus, tomatoes, pesto, and basil. It's super simple and such a great taste of spring flavors. Plus it's an easy vegetarian/ meatless meal to make that is even satisfying for those who are used to having meat at meals. You can also try my greek version of this... Greek Tortellini Pasta Salad... it has FETA.
Mushroom, Kale & Feta Crustless Quiche
This quiche is SO good! It's packed with kale which gives it all sorts of nutrients. I also added mushrooms which give it substance and feta cheese. This dish would be perfect for everything from Easter morning to a weekday dinner with a salad.
6 Ingredient Baked Salmon & Veggies in Foil
Here's another great dinner idea with just a handful of ingredients! This recipe also uses packaged pesto to flavor the salmon and spring veggies like asparagus and tomato. The foil means there is no clean up.
Healthy Whole Wheat Strawberry Muffins
Spring means strawberries from my home state of Florida! I love to stock up this time of year and one of my favorite recipes are these Healthy Whole Wheat Strawberry Muffins. They use oatmeal, banana and coconut sugar instead of more traditional baking ingredients. Don't worry though, they still taste amazing.
