Sheet Pan Vegetarian Fajitas are an oven-baked, healthy version of the classic Mexican restaurant favorite. Made with bell peppers, onion, zucchini, and portobello mushrooms these fajitas are loaded with fresh veggies and a Homemade Taco Seasoning. This 20-minute meal is super easy to make and the perfect weekday meal. Adjust your toppings to make these also vegan, gluten-free, dairy-free, or low carb.
Serve them with my Homemade Salsa and Fresh Guacamole.
Vegetarian Fajitas
These Sheet Pan Vegetarian Fajitas make the perfect fast and healthy meal. They are packed to the brim with the expected bell peppers and onions but I also added sliced zucchini and portobello mushrooms for extra taste, substance, and textures. Use my Homemade Tacos Seasoning to bring this dish to life with vibrant flavor.
This is one of my favorite weekday meals because they are made on a sheet pan in the oven in less than 20 minutes. Plus if you line the sheet pan with foil you have very little clean-up when making these.
You'll love how fast and simple these are to make plus the recipe is very customizable to different tastes and diets. The fajitas themselves are vegan, gluten-free, low carb, and keto, and depending on the toppings and tortillas (or go no tortillas) you pick. You can even use these fajita veggies for Vegetarian Fajitas Bowls.
Plus, who doesn't LOVE good vegetarian fajitas! In fact, I'd venture to say mine is even better than the ones at the restaurant because they are not super greasy! I use just enough oil to cook the veggies... this is a healthy pescatarian recipe you can feel good eating.
What is a fajita?
Traditionally fajitas are a Mexican or Tex-Mex dish that serves thinly sliced meat strips with sliced peppers and onions. The mixture is seasoned and cooked and/or grilled on a hot cast iron skillet. Most traditionally the term fajita was originally referred to as a skirt steak. The fajitas are served with flour or corn tortilla.
Since this recipe features fajitas without meat, I used mushrooms as a substitute for making these vegetarian fajitas. So this recipe isn't traditional, but it sure is good!

Are fajita veggies healthy?
Yes! This recipe is super healthy since it features fresh and vibrant vegetables. You can fill two hearty tortillas and it's only about 300 calories plus any toppings you add.

Here's an overview of what you'll need to make Vegetarian Fajitas, but keep reading for the complete printable recipe.
- Bell Peppers: You'll need two bell peppers. I used yellow and orange for the photos, but whatever you can find is great. To prep, the bell pepper cut the top and bottom off of the pepper and then slice off the sides. Cut the large pieces into ¼ inch think stripes.
- Onion: I like to use a sweet or Vidalia onion for my vegetarian fajitas. Thinly slice the onion into strips. It's important that all your peppers and onions are similar sizes so they cook in about the same amount of time. You could also use white or red onions depending on what you had.
- Zucchini: I love adding a small fresh zucchini to my fajitas! They add substance and color. Slice the zucchini into strips about the same size as the peppers and onions.
- Portobello Mushrooms: I used sliced baby button portobello mushrooms for these photos, but if you had the large portobello mushroom caps you could slice and use those too.
- Olive Oil: Most fajitas are kind of greasy, but I use just a bit of olive oil. Use just enough to coat the veggie mixture. You can also use avocado oil.
- Taco Seasoning: I use my Homemade Tacos Seasoning blend of chili powder, cumin, garlic powder, onion powder, smoked paprika, and cayenne pepper. If you don't want to make your own, this one!
- Salt & Pepper
- Tortillas: Pick your favorite type of tortilla and which style fits your diet and taste preferences. You can do whole wheat, keto, low carb, or traditional flour tortillas.

- Homemade Guacamole
- Black Bean Salsa
- Chipolte Lime Ranch <-- serve as a sauce
- Sliced Avocado
- Chopped Tomato
- Grated Cheese or Crumbled Cheese
- Slice Jalapenos
- Fresh Cilantro
- Lime Juice
- Plain Greek Yogurt or Sour Cream
- Salad Greens or Chopped Lettuce
Instructions:
To Make the Vegetarian Fajitas:
- Preheat the oven to 425 degrees and line a baking sheet with foil.
- Spray the pan with cooking spray.
- Toss the vegetable mixture- bell peppers, onion, zucchini, and mushrooms with the Homemade Taco Seasoning Mix and just enough olive oil to coat them. Stir the mixture together.
- Spread veggie mixture across the pan.
- Bake for about 20 minutes or until the vegetables are tender.
- Serve with tortillas and toppings.
To Assemble the Fajitas:
- Warm your tortillas.
- Hold your tortilla in your hand.
- Use a fork to pick up the vegetables and put them into your tortilla.
- Top with your favorite toppings.
- Enjoy your veggie fajitas immediately.
Variations
I love this Sheet Pan Vegetarian Fajitas recipe as written, but here are some delicious ways to mix it up.
- Make a Vegetarian Fajita Bowl: Instead of assembling the fajitas veggies in a tortilla, top them with a bowl of Cilantro Lime Brown Rice. Serve with your favorite toppings.
- Make them Fajitas Quesadilla: Use the vegetables to make a Vegetarian Fajitas Quesadilla.
- Make them Gluten Free: Use a gluten-free tortilla.
- Make them Low Carb: Use a low-carb tortilla or make it into a fajita bowl but use cauliflower rice instead of traditional rice.
- Make them Vegan: Keep the toppings dairy-free by skipping the greek yogurt, cheese, or sour cream.
FAQ
How do I store the fajitas?
Store any leftovers in an airtight container in the refrigerator for 3-5 days.
Can I make these ahead of time?
Although they taste best right out of the oven, you can make these for meal prep and assemble fajitas or fajitas bowls fresh for lunch the next day.
You can also meal prep these by cutting all the vegetables and tossing them in the Taco Seasoning Mix and olive oil. Store the mixture in a ziplock bag until you are ready to roast them. You can do this a day or two ahead of time.

Your family can assemble their own vegetarian oven fajita favorites at the table... so everyone can get what they want. To make these photos pretty I put this on a nice plate, but I often just stick the sheet pan in the middle of the table to serve. Sometimes it's best to keep it simple.
