Sideline meat this football season with my delightful Buffalo Roasted Cauliflower!

With football season in full swing, I've been in search of some fun meat free alternatives for game day. I love a bag of chips as much as the next person, but it's a long season and some plant-based, less-processed treats will come in handy.
My Roasted Buffalo Cauliflower is exactly what the doctor ordered!
The Roasted Buffalo Cauliflower is coated in a light layer of batter using one of my favorite cooking ingredients, Silk Almond Milk. All of Silk's plant-based beverages are so versatile in the kitchen, but for this recipe I chose the original unsweetened almond milk! At only 30 calories a serving, it's great way to cut calories out of a dish.
The florets are roasted in the oven, not fried and then coated with a delicious hot wing mixture. There is some butter in the wing sauce, but you could easily sub a vegan or light butter alternative.
Serve with your favorite dipping sauce plus lots of carrots and celery to round out the snack or meal.
It's a winning combination of spice and healthy that is perfect for game day!
And did I mention the hot wing sauce... it's basically a football loving dream.

Buffalo Roasted Cauliflower
Ingredients
- ½ cup all purpose flour
- ½ cup unsweetened original Silk Almond Milk
- ½ teaspoon garlic salt
- ¼ teaspoon onion powder
- ¼ teaspoon pepper
- 1 medium head cauliflower, broken into florets
- cooking spray
For the sauce
- 3 tablespoons butter or vegan alternative
- ¼ cup hot sauce
Instructions
- Preheat the oven to 450 degrees. Spray two cookie sheets with the cooking spray.
- Mix the flour, Silk, garlic salt, onion powder and pepper in a bowl. It will stay thick.
- Dip the florets in the coating, covering it well. Lay the florets on the cookie sheet. They should not touch.
- Bake for 15 minutes or until they are turning brown. Flip halfway through.
- While the cauliflower is roasting, make sauce.
- In a sauce pan melt the butter and stir in the hot sauce.
- Take the florets out of the oven and brush the butter hot sauce mixture on both sides.
- Return to oven for 5-7 minutes.
- Serve with your favorite wing dipping sauce. Vegan ranch is available!

So I've seen a lot of buffalo cauliflower recipes but I just can't believe they taste good, mostly because I don't like cauliflower, haha. However, you may have convinced me on this recipe. I love taking food for football games, but hate how fattening all of it can be so this can be a great alternative!
