Instead of using carb-filled potatoes, this recipe swaps out steamed and mashed cauliflower. Mimicking mashed potatoes, this dish is seasoned with garlic and parmesan, once it's all whipped together and baked, you'd never know this dish is low carb, low cal, gluten-free, and clean eating. It tastes close to traditional mashed potatoes and is a lovely healthy substitute. Plus it's only 100 calories per serving!
Cauliflower is a great carb-free swap from standard mashed potatoes or a great way to get in more veggies. I love carbs and eating potatoes, but I also love mixing them up in the kitchen and having variety with the vegetables we eat. I also do the healthy swap of trading out Greek yogurt for sour cream. - Garlic: I use fresh whole garlic cloves in this and steam it in the pot with the cauliflower for extra flavor.
- Plain Greek Yogurt: Instead of using sour cream or cream cheese, I kept this recipe super light and healthy by using plain Greek yogurt. You can use low-fat or full-fat.
- Milk: You can use your favorite type of milk including full-fat or low-fat, depending on your diet.
- Parmesan Cheese: Just a little brings a rich, nutty flavor to this dish.
- Kosher Salt & Black Pepper To Taste
Instructions:

- Preheat oven to 350 degrees. Spray a baking dish with cooking spray.
- Using a vegetable steamer basket or steamer insert, as shown below, boil an inch or two of water and steam the cauliflower florets and garlic for 10-12 minutes until fork tender.
- Put the steamed cauliflower, garlic, milk, Greek yogurt, half the Parmesan, salt, and pepper in a blender or food processor and blend until smooth and you have your desired consistency. If you don't have a food processor you could do it by hand with a potato masher, but it will not be nearly as smooth. You could also use an immersion blender.
- Put the mixture in an oven-friendly casserole dish and top with the remainder of the cheese.
- Bake at 350 for 25-30 minutes or until the top browns.
- Garnish with fresh chives or green onions and serve.
