Hearty and healthy, my Kale and Wheat Berry Salad recipe will quickly become one of your favorites.
Hi friends!
I have a little obsession with kale and wheat berries lately. I burnt the hubs out of eating quinoa and I went looking for a substitute. I found wheat berries to be super satisfying, hearty, chewy and delicious. Better yet, I didn't get anymore "not this again" looks from the Hubs.
He actually asked for leftovers with my Kale and Wheat Berry Salad recipe! You know that means you have a winning combination.
This salad is great year-round, but it's especially ideal in winter because the ingredients are simple and don't require a bunch of out of season vegetables.
The chewy wheat berries make the salad hearty and substantial without adding a bunch of cheese too!
This is something I will be making again and again.
Kale and Wheat Berry Salad
Ingredients
Instructions
- Whisk the dressing together.
- Massage it into the kale.
- Toss with the wheat berries, onion and cranberries.
