Can y'all believe how quickly we cruised through October? I can't! With Halloween this weekend and Thanksgiving less than 28 days away <---YES, I just did that! I know I'm going to need some ways to keep my energy level up though all the madness. Speaking of the end of the month, who's in for the Best of Blogs linkup tomorrow?!
Now I love candy as much as the next girl, and in the sake of moderation I'm not suggesting you completely deprive yourself of some this Halloween. What I am suggesting is keeping some more fulfilling, nourishing treats in the fridge to have most of the time.
Like my Healthy No Bake Pumpkin Pie Bites.
These babies provide the kind of fuel that keep you full for hours, not make you hungry again in 10 minutes. Indulge in a few treats and then go back to stuff like this.
They are naturally sweet using dates and unsweetened coconut.
I added some dark chocolate chips to mine... because when in doubt I always add chocolate... but you can leave them off as well. I also dunked them in extra coconut... because that's how I roll... but once again feel free to adjust to your personal taste.
My Healthy No Bake Pumpkin Pie Bites somehow come out tasting perfectly pumpkin-y. It's crazy how versatile dates are.
Store the Healthy No Bake Pumpkin Pie Bites in the fridge for a healthy bite to get a boost of energy or hold your rumbling belly over until meal time. It's so nice to have snacks like these in the fridge, especially this time of year when there seems to be food everywhere.

Healthy Pumpkin Pie Chocolate Chip Energy Bites
Ingredients
- 1 cup dates
- ½ cup pecans
- ⅓ cup pumpkin puree, not pumpkin pie mix
- ¼ cup unsweetened flake coconut, plus extra to roll the balls in
- 2 teaspoons vanilla
- ¾ teaspoon pumpkin pie spice
- pinch of salt
- 1 teaspoon mini dark chocolate chips
Instructions
- Soak dates in water for 15-30 minutes. Drain.
- Using a food processor chop up the dates.
- Add the rest of the ingredients, except for the chocolate chips, and mix until smooth.
- Remove the mixture from the food processor and fold in the chocolate chip.
- Form 10-12 energy balls with your hands. Roll each ball in the extra coconut to form a crust. Place on a lined cookie sheet and put in the fridge. The balls will harden and become less sticky in the fridge. Store in an airtight container in the fridge.
