My Roasted Cauliflower Salad recipe is packed with goodies and totally addictive!

Hope y'all had a great weekend! Ours involved all things bathroom remodeling and I'll share a few photos of the chaos with you tomorrow. In the meantime I have this super yummy new recipe to share with you today.
Roasted Cauliflower Salad Recipe
I find that I eat less salads in the winter. Without my garden producing a steady stream of vegetables, I'm just not as inspired. I figured some of you might be in the same boat. 🙂
With that in mind I decided to create a totally addictive salad bowl that is packed with plant-based protein, has ingredients that are really easy to find this time of year AND tastes nothing short of dreamy. Basically a salad that FULL of nutrients AND would make both of us CRAVE salad in winter.
This Roasted Cauliflower Salad recipe totally delivers.
The recipe starts with my Roasted Ranch Cauliflower from last week. To make this dish vegan friendly you can leave off the parmesan OR use my Curry Roasted Cauliflower.
Either way the roasted cauliflower is a perfect addiction to this dish. It might seem strange to add a cooked veggie, but TRUST ME, it totally works here. Roasting the cauliflower brings out the flavor and makes the salad heartier and more filling... perfect for this time of year.
The next component is crispy chickpeas! Once again my Crispy Ranch Chickpeas from two weeks ago make the perfect addition. These are already vegan, so no subs needed there.
The crispy chickpeas add protein and a perfect and much needed crunch to the meal. Plus they keep this gluten-free! Think of them as your crouton.
Next up is my Lemon Tahini Dressing... which tastes amazing on just about everything I try it with. It is by far my favorite salad dressing. The tahini perfectly complements the rich roasted cauliflower and the crispy ranch chickpeas. These three ingredients are basically a flavor explosion in the best possible way.
Every bite will have you coming back from more.
To finish off the dish I use fresh kale and cooked quinoa. The kale is a perfect hearty base for winter salads like this one. It also works well with the roasted cauliflower... providing a bit of balance to the salad. The quinoa adds some substance and more protein.
The final product comes together in a dish I swear you'll want to eat over and over again! Make a big batch of all the components to enjoy for lunches all week. You'll actually be looking forward to that next winter salad.

Roasted Cauliflower Salad
Ingredients
- 1 recipe Parmesan Ranch Cauliflower or Curry Roasted Cauliflower (vegan), see recipe notes for links
- 1 recipe Crispy Ranch Chickpeas
- 1 recipe Lemon Tahini Dressing
- 1 cup cooked quinoa
- 4 cups kale
Instructions
- Pile the kale in a bowl. Top with the cauliflower, chickpeas and quinoa. Drizzle with the lemon tahini dressing.
