My Blackened Shrimp Tacos with Mango Salsa look like a fancy, fussy meal but are surprisingly simple to make for a fast weeknight dinner. In fact, these healthy tacos can be on your table in less than 20 minutes! They are made with juicy shrimp and mango salsa. My secret ingredient is a super simple 3 ingredient Greek Yogurt Chipotle Sauce. It gives these tacos a much-needed just spicy enough- but not too spicy- kick. The drizzle really sets these tacos apart from the rest.
The best part about these shrimp is they are made fuss-free on a sheet pan in the oven with my Homemade Blackening Seasoning. No cleaning up a messing kitchen afterward either. This meal is the best of everything - easy, healthy, and delicious.
You seriously can't go wrong with making and serving these shrimp tacos. The flavors and textures are just perfect and pop off the plate. No need to wait until Taco Tuesday to make your favorite tacos.

Ingredients:
Here's an overview of the ingredients you'll need to make my Blackened Shrimp Tacos with Mango Salsa. Keep reading for the complete printable recipe with amounts.
For the Blackened Shrimp-
- Shrimp: You'll need a pound of shrimp. You can use almost any size but medium to large shrimp are best. You'll want to either buy the type that is peeled and deveined or devein them yourself. Remove the tails as well.
- Blackened Seasoning: Blacking Seasoning is the perfect mixture of spices for shrimp including smoked paprika, onion powder, garlic powder, cayenne, and oregano. It's similar to a Cajun spice and is a seasoning blend often used on seafood at the beach. Because of that, it's a great spice for shrimp tacos. Use my Homemade Blackening Seasoning or use my favorite store-bought type. If you don't like blackening seasoning or want more traditional taco flavors, you can easily make this any taco seasoning or my Homemade Taco Seasoning Mix. You can also make these with Cajun Seasoning, which is pretty similar to blackening seasoning.
- Olive Oil: I use just a touch of olive oil to cook the shrimp in! Because it's not loaded down with oil this recipe is pretty healthy. You can use your favorite cooking oil for this, you don't need your highest quality extra virgin. Avocado Oil would also be a good choice.
For the Mango Salsa-
- Mango: Mango is the perfect base for the simple fruit salsa that tops these tacos. If you aren't used to peeling and cutting them, start with my directions on how to peel a mango with a cup. Look for mangos that are ripe but not crazy soft or mushy.
- Red Onion: Red onion adds a pungent bite to the mango salsa.
- Jalapeno: I like adding a touch of jalapeno to my fruit salsa. For less spice, remove the seeds and white part inside the jalapeno. For more spice, leave it on. If you don't like jalapeno just leave it out or substitute bell pepper.
- Cilantro: Fresh cilantro is a key flavor in this mango salsa for shrimp tacos! Look for bright fresh leaves.
- Lime: You'll need fresh lime juice for both the mango salsa, Greek Yogurt Chipotle Sauce, and for assembling the tacos.
Greek Yogurt Chipotle Sauce-
- Greek Yogurt: The base of this crazy simple but flavorful taco sauce is Greek yogurt. You plain Greek yogurt. Fat-free or full fat will work depending on what you keep in the fridge and your dietary preferences. You could also substitute sour cream.
- Chipotles in Adobo Sauce: This little jar of chipotles is packed with yummy flavor! You'll want to move the actual peppers to the side of the jar and scoop out the dark red juice they are soaking in. That juice gives this sauce its flavor. It can be powerful, so start with less and add more to the taste. You can usually find it in the Hispanic section of the grocery store and find it online here.
- Lime: Us the other half of the lime to finish off this sauce.
To Finish the Blackened Shrimp Tacos-
- Tortillas: You can pick whatever type of tortilla matches your preferences and diet including whole wheat tortillas, small corn tortillas, flour tortilla, or even hard taco shells.
- Garnish: Extra Cilantro and Lime
Best Shrimp for Tacos?
There are a lot of types of shrimp that work for tacos! You don't want the smallest shrimp because they will just fall out of the tacos, but the largest ones will be too big for the shells and are a waste because they are more expensive. You'll generally want medium to large shrimp which are 40-50 a pound or 26-50 a pound. The shrimp in the photo below is "large."
You can use fresh or frozen shrimp, whether you have access to it. If you are buying frozen shrimp check the packaging to make sure they haven't put in any additives that don't match your diet and/or preferences. To thaw out frozen shrimp either put them in the fridge overnight or run cool water over them in a colander for about 5 minutes.
For cooking and eating, you'll want to remove the shell, vein, and tail. If buying frozen shrimp you can often find ones where that work has already been done for you, which is a great time-saving hack for families.
Directions:
For the Blackened Shrimp:
- Preheat the oven to 425 degrees.
- Spray a baking sheet with cooking spray. For easy clean up line it with foil and then spray it.
- Toss your shrimp in the Blackening Seasoning and olive oil in a medium bowl.
- Put the shrimp on the baking sheet in a single layer.
- Cook for 3-5 minutes.
How do I know when the shrimp are cooked?
The shrimp will be done when they turn pink and just start to curl. They cook fast, so don't go far. Smaller shrimp will cook faster and larger shrimp will take a touch longer. They will look like the photo below!
For the Mango Salsa:
- Chop and dice your mango, red onion, jalapeno, and cilantro.
- In a small bowl, toss the ingredients together. Add the lime.
- Season, if desired, with a touch of salt.

For the Greek Yogurt Chipotle Sauce:
- To make the Greek Yogurt Chipotle Sauce for the Blackened Shrimp Tacos with mango salsa, start with a small mixing bowl. Measure out your Greek yogurt.
- Spoon out the chipotle sauce by pushing the peppers to the side of the jar. Start with less and add more to tastes, as it can be spicy.
- Add a touch of lime. Stir until well combined.
- You can either just spoon on the sauce or put it in a zip lock bag and cut a small hole in the corner to create the pretty line.
To Assemble Tacos:
- To assemble the Blackened Shrimp Tacos with Mango Salsa, start with the tortilla, If desired, warm up your tortilla either on the stove or microwave.
- Fill with the blackened shrimp. Squeeze some lime juice on top.
- Spoon the Mango Salsa on top.
- Drizzle the Greek Yogurt Chipotle Sauce.

These tacos aren't very spicy. The blackening seasoning is fairly mild. The only real spice comes from the chipotles in the Greek Yogurt Chipotle Sauce. To make it spicier, all more chipotles. To make the shrimp spicier add a touch of cayenne or chipotle pepper to the mix. You could also add a splash of your favorite hot sauce on top.
Can I make these ahead of time?
You can make all of the components - the blackened shrimp, mango salsa, and Greek Yogurt chipotle sauce - ahead of time. When you are ready to make the tacos just warm the tortillas and shrimp and then assemble the tacos as shown.
How do I store leftovers?
Store any leftovers separately in an airtight container in the fridge for up to three days. Put the blackened shrimp, sauce, and mango salsa in three different containers.
