Now that we have our menu, including the Vegetarian Sliders, let’s get an overview of what you need to make them. The full printable recipe is below.
- King’s Hawaiian Rolls: These tender, slightly sweet rolls make the perfect base for Vegetarian Sliders. The cool part about the rolls is they are sold cooked together in one sheet, so you can assemble 12 sandwiches at a time and then cut them or pull them apart after cooking.
- Cabot Sharp Cheddar Shredded Cheese: I love the rich flavor of white cheddar cheese, and Cabot makes the best! I like to use the convenient already shredded packages of cheese for this recipe. Cabot cheese is in a class of its own.
- Portobello Mushrooms: Look for rich sliced portobello mushrooms. You can use the small ones, but I think the larger caps work better for the sandwich, so you don't have tiny pieces of mushroom falling out when you try to eat the sandwich.
- Balsamic Vinegar: The portobello mushrooms need a marinade, and balsamic vinegar gives them that perfect rich flavor you crave.
- Soy Sauce: The second key flavor to getting meaty and rich portobello mushrooms is soy sauce. You don't really get an Asian flavor from it. It just gives the mushrooms a salty and rich flavor. You do not need extra salt in the recipe because of the soy sauce.
- Olive Oil: A little bit of olive oil gives the marinade something to hang on to.
- Dried Rosemary: Dried rosemary is the perfect herb to add more richness to the mushrooms. You can also use fresh if you have it.
- Garlic Powder: I use garlic powder in the marinade to get an even garlic taste on the mushrooms.
- Butter: I like to cook my mushrooms in just a touch of butter. It adds more depth of flavor to the mushrooms. I just use a small amount.
Instructions:
Full instructions for Vegetarian Sliders are below in a printable recipe, but here are the basic steps you'll need to make them. This might look like a long list of instructions, but these come together easily and most of the cooking time is hands-off baking in the oven.
Step 1: Prepare the King's Hawaiian Rolls
- Take a 12-pack of the King's Hawaiian Rolls out of the plastic and remove the white paper around the rolls.
- Do not separate or rip apart the rolls.
- Get a long-serrated bread knife.
- Stand the rolls up on one end and carefully cut the rolls the entire width of the rolls.
- You'll end up with a sheet of the top and bottom of the rolls. Carefully set them on a baking sheet.
Step 2: Prepare the Portobello Mushrooms
- To make the mushrooms for the vegetarian sliders, you'll need to make a marinade to give the mushrooms more flavor. Add the balsamic vinegar, soy sauce, olive oil, rosemary, and garlic powder to a zipper bag or shallow dish. Stir together the marinade. Put the sliced portobello into the marinade and allow them to sit for 15 minutes or up to an hour.
- Add the butter to a large skillet pan. Melt the butter over medium heat and add the portobello mushrooms to the marinade pan.
- Stir and cook the mushrooms until tender, about 5-8 minutes.
Step 3: Assemble and Bake the Vegetarian Sliders
- Next, you assemble the vegetarian sliders. Set the cut rolls on a baking sheet.
- Layer half of the shredded cheese on the bottom half of the rolls.
- Use tongs to pull the mushrooms out of the saucy mixture and put a layer of mushrooms on the cheese. You do not want extra sauce in the sandwich. It can get soggy.
- Layer the second half of the cheese on top.
- Cover the cheese and mushroom mixture with the top of the rolls. Put the top of the rolls on top.
- Cover and bake for 15-20 minutes or until the buns are toasted and the cheese is melted. The melty cheese in these is so good!
Step 4: Cut the Vegetarian Sliders
- Remove from the oven.
- Following the lines of the rolls, cut the vegetarian sliders into individual sandwiches.

- Mix Up the Spices: Switch out the rosemary for Italian Seasoning, Mexican Spice Mix, or Herbs de Provence.
- Make Vegan Slider: Swap out the cheese and butter for dairy-free cheese and butter.

- 2 cups Cabot White Sharp Cheddar Cheese, shredded
Instructions
- Add the balsamic vinegar, soy sauce, olive oil, rosemary, and garlic powder to a storage bag or shallow dish. Stir together the marinade. Put the sliced portobello into the marinade and allow them to sit for 15 minutes or up to an hour.
- Preheat the oven to 350 degrees.
- While the oven is preheating, add the butter to a large pan. Melt the butter over medium heat, add the portobello mushrooms with the marinade the pan.
- Stir and cook the mushrooms until tender, about 5-8 minutes.
- While the mushrooms are cooking, use a sharp, serrated bread knife to cut the King's Hawaiian Rolls in half. Do not separate them into individual rolls. Set the rolls on a baking sheet.
- Layer half of the shredded cheese on the bread.
- Use tongs to pull the mushrooms out of the saucy mixture and put a layer of mushrooms on the cheese. You do not want extra sauce in the sandwich.
- Layer the second half of the cheese on top.
