Like most egg dishes, this is best enjoyed freshly cooked but you can store leftovers in an airtight container in the fridge for two days.
Freezing
I would not freeze the scrambled eggs with cottage cheese because they will thaw out watery and hard.
Why are my eggs watery when I add cottage cheese?
Cottage cheese brands have different water content. If there is any water at the top of the cottage cheese when you open it, be sure to drain it off. Low-fat cottage cheese does have more water in it, so make sure to drain it. Buying a good cottage cheese can help with that. Also, be sure to cook your eggs at a lower temperature, stirring frequently because that will help the water to not come out of the eggs.
What if I don't want to see the cottage cheese in my eggs?
You can also blend the eggs and cottage cheese in a blender to make a smooth mixture to scramble. Cook the mixture following the same instructions.
