These Strawberry Waffles are pure breakfast magic. Made with just a few simple ingredients, including freshly diced strawberries, these simple waffle will be the start of any breakfast or brunch at home. They are fluffy, light, have a golden crust and are just sweet enough.
Sunday is waffle or pancake day in our house, and these delightful waffles and my Banana Waffles make a frequent appearance, especially in the spring and early summer when fresh strawberries are in season. Instead of going out, it's so nice to have a slower morning with breakfast at home. We all just love and look forward to this tradition. Our favorite waffle iron gets plenty of use.
This Strawberry Waffles recipe includes two variations, depending on how ambitious you are feeling. The first is homemade and the second uses waffle mix, with taste add-ins to make it feel homemade.

- All-Purpose Flour: Flour is the base of most waffle recipe and I like a basic all-purpose flour for this. If you want a healthier version, you can substitute white wheat flour or whole wheat flour if you'd like. To make these gluten-free, use a 1:1 replacement gluten free flour.
- Baking Goods: You'll need baking powder, not baking soda, to let your waffles rise. Make sure your baking powder if fresh and not expired, or it will not rise.
- Sugar: I use just a tablespoon of regular sugar in these, so they are not overly sweet. You can also add more or substitute maple syrup or honey, depending on your diet.
- Milk: I like to use 2% milk for my baking, but you can use what you have in the fridge including while milk. To make these dairy-free, you can substitute dairy-free milk like almond milk.
- Egg: Eggs help keep everything together. To prepare the large eggs, crack them in a bowl and lightly beat them.
- Butter: I love the butter flavor in waffles, so I use it here but you can use your favorite oil including coconut oil. The butter will need to be melted in the microwave to mix into the batter.
- Strawberries: To get the strawberry flavor, I use freshly chopped strawberries. The fresh berries will need to chopped into pretty small pieces to evenly distribute in the strawberry batter. You can also use strawberry preserves. You will also need some extra strawberries to slice on top.
- Cinnamon and Vanilla Extract: These add so much flavor! You can also add a touch of nutmeg if you'd like!

Homemade Strawberry Waffles Instructions:

- In a large bowl, whisk together the dry ingredients, the flour, baking powder, salt, sugar and cinnamon.
- In the same bowl as the flour mixture, add the wet ingredients, the milk, melted butter, and vanilla. Mix until well combined. Fold in the strawberries. Do not overmix the batter or it will make tough, not light and fluffy waffles.
- Allow the batter to rest for 5 minutes.
- While the waffle batter is resting, heat your waffle iron. Make sure to preheat the iron, so you get the crisp outside of the waffle.
- Spray the waffle iron with cooking spray. Pour the batter into the waffle maker and cook according to the waffle iron instructions.
- Plate and top with fresh sliced strawberries, powdered sugar and maple syrup.

Variations
I love Strawberry Waffles as written, but here are some fun variations.
- Strawberry Banana Waffles: Use half mashed banana and half strawberries.
- Mixed Berry Waffles: Instead of just strawberries use other berries like blueberries, raspberries or blackberries.
- Strawberry Chocolate Chip Waffles: Add chocolate chips to the batter as well.

Storage & Leftovers
Store in leftovers in an airtight container for up to a week.
Freezing
Strawberry Waffles freeze well. To freeze them allow them to completely cool. Freeze the the leftover waffles with parchment paper in between them to keep them from sticking. Store in plastic wrap or aluminum foil in an airtight container in the freezer for up to three months.
To reheat the frozen waffles, put them directly from the freezer to the toaster oven or oven and heat until warm.
