Mahi Mahi Fish Tacos with Easy Chipolte Sauce and Cilantro Lime Slaw Share on XIt's Easy to Make These Mahi Mahi Fish Tacos at Home!
YES, it really is easy to make these Mahi Mahi Fish Tacos at home. It takes just a handful of steps to get these gorgeous but healthy fish tacos on your table for dinner. To start you'll need to get and prepare the fish. I used Mahi Mahi for my fish tacos BUT you can use any other type of flaky white fish. This is one of my favorite taco recipes.
Where do I find Mahi Mahi?
Mahi Mahi is an easy-to-find white fish widely found in warm waters. Most grocery stores will have it in the frozen fish section even if you live in a location without access to fresh fish. I made my fish tacos with frozen fish but you can also check your local fish counter for fresh fish too. Just make sure to ask if it's fresh or just thawed from frozen. It is also known as dolphinfish or dorado but is not the same as dolphin mammals.
What does mahi-mahi taste like?
Mahi Mahi has a light, sweet and mild flavor with a firm texture that is similar to cod. It has large moist flakes which work well in fish tacos.
What fish is most common in fish tacos?
White fish like Mahi Mahi is one of the most common fish for fish tacos. If you would like to make these tacos with another fish try looking for a lean and flakey white fish like halibut, tilapia, cod, bass, or snapper.
Are fish tacos healthy for you?
YES! Fish Tacos can actually be healthy for you. Oven-baked or grilled Mahi Mahi Fish Tacos like these prepared without a lot of oil and not fried are a fabulous healthy dinner option. Just watch out for your toppings! My chipotle sauce for fish tacos and Cilantro Lime Coleslaw are both super healthy options because they are prepared without mayo or sour cream. They use greek yogurt instead.
Chipotle Sauce For Fish Tacos
Now that we have everything we need for the Mahi Mahi Fish Tacos let's dive into the toppings including the Chipotle Sauce for fish tacos. I love this particular sauce for fish tacos because it's CRAZY simple to make with just three ingredients including healthy greek yogurt. It really keeps the calorie count down on these tacos.
I make my fish taco sauce with greek yogurt, chipotle in adobo sauce, and lime. That's it! Just mix it together and go. It makes the perfect drizzle and creamy topping for these tacos.
You'll also need the slaw on the top. Mine is also super healthy with Greek yogurt instead of a mayo base. Follow my recipe for Cilantro Lime Coleslaw for a tasty healthy fish taco topping and a nice crunch.

This is an overview of the instructions to make this Mahi Mahi Fish Tacos recipe, but the full detailed printable recipe is below in the recipe card.
For the Fish:
- Mahi Mahi Fillets: Look for Mahi Mahi in the freezer section of your grocery store or at the fish counter. It's totally fine to use frozen fish here as most fish you'll find away from the coast have already been frozen anyway. To thaw out your fish put it in the fridge the day before or if you are short on time run it under cool water in the sink.
- Olive Oil: A touch of olive oil gives the fish marinade some substance.
- Lime: I love the taste of fresh lime with this fish marinade.
- Taco Seasoning: I like to make my own Taco Seasoning but if you don't have time, here's a great store-bought Taco Seasoning. The taco seasoning brings out the perfect flavors you'll need in the tacos without adding a lot of ingredients. It's a great blend of chili powder, ground cumin, paprika, onion powder, garlic powder, and cayenne pepper.
- Chiplote in Adobo: This is my secret sauce! If you aren't familiar with this you can find it in the ethnic section of the grocery store near the Mexican food or on Amazon. It's a small can with actual peppers inside. I just use the dark red sauce inside. It's smoky, and delicious, and gives the fish that classic chipotle flavoring. If you want more spice, add more of this.
- Salt & Pepper
For the Chipotle Sauce for Fish Tacos:
- Greek Yogurt: Creamy greek yogurt is the perfect base for this sauce.
- Chipotle in Adobo: This is the same sauce I used in the fish so you can use more of the can.
- Lime: Fresh lime juice brings out the flavors of this sauce. Save the other half of the lime for the garnish.
For the Cilantro Lime Coleslaw:
Follow my simple recipe for Cilantro Lime Coleslaw, but here's what you will need.
- Coleslaw Mix: You'll need either a bag of coleslaw mix or shredded cabbage, carrots, and purple cabbage.
- Greek Yogurt: Creamy plain greek yogurt instead of mayo.
- Honey: A touch of honey adds some sweetness without white sugar.
- Garlic Powder: I like the flavor of garlic powder here.
- Cilantro: You'll need more cilantro to get that key flavor!
Extras:
- Tortillas: You'll want 6 taco-sized tortillas for this recipe. If you are watching calories, check the package on what you buy. Small tortillas can widely vary in calories and nutritional value. You can use whole wheat tortillas, corn tortillas, or flour tortillas.
- Lime Wedges
- Cilantro
- Jalapenos
Instructions:
This is an overview and step-by-step instructions to make this Mahi Mahi Fish Tacos recipe, but the full detailed printable recipe is below in the recipe card.
How to Make Healthy Fish Tacos:
- Start with the marinate. Mix the marinade for the fish with olive oil, lime juice, taco seasoning, chipotle in adobo sauce, salt, and pepper.
- Put the sauce and spice mixture in a plastic bag and put the mahi mahi inside. Place in the fridge to marinate for 15 minutes. Don't leave the fish in the marinate for more than 30 minutes or it will start to degrade the fish.
- Preheat the oven to 400 degrees. Put the fish in a pan or baking sheet sprayed with cooking spray.
- Cook the fish for 10-15 minutes until the fish turns opaque and starts to flake. Cooking time will vary due to the thickness of your fish. Don't overcook the fish or it will be tough. Add a squeeze of lime to the fish after cooking.
- You can also cook the fish in a skillet on the stove top over medium-high heat with olive oil until opaque.
How to Make Chipotle Sauce for Fish Tacos:
-
While the fish is cooking prepare the chipotle sauce for fish tacos.
-
In a small bowl, mix together the Greek yogurt, chipotle in adobo sauce, and lime. Add salt and pepper as desired.
- Set it aside to drizzle on the tacos.
How to Assemble the Tacos:
-
Heat your tortillas. I like to put mine in a skillet to get them slightly browned. You can also microwave them with a damp paper towel.
-
Portion the fish out into 6 pieces.
- Assemble your Cilantro Lime Coleslaw.
-
Put the fish on the tortilla. Top it with some Cilantro Lime Coleslaw and drizzle the Chipotle Sauce for fish tacos on top.
- Serve immediately!
Variations
I love this Mahi Mahi Fish Tacos recipe as written, but here are some fun variations.
- Use Another Fish: There are so many yummy fish that would work with this recipe. Any white fish fillet like cod, tilapia, snapper, halibut, or bass! Just adjust the cooking time if your fish is significantly thicker or thinner than Mahi Mahi. You can even make these with salmon!
- Use A Bagged Salad: If you are in a hurry and don't want to make all the toppings you can use a bagged salad mix- the cabbage slaw type work well- as a topping. Any of them with more of a coleslaw base that is Mexican or Southwest inspired are great on top.
- Bake it Blackened Mahi Mahi Tacos: Use my Homemade Blackening Seasoning to blacken your fish for the Mahi Mahi Tacos, for a slightly flavor profile. Follow my recipe for Baked Blackened Mahi Mahi.
- Make it Spicy: These have a little kick, but to add more kick use more chipotle in adobo, hot sauce, or sriracha, or add chipotle Cholula on top.
- Add More Toppings: I like to keep my fish tacos simple but you can add lots more fish taco toppings like avocado, cotija cheese, onions, guacamole, pico de gallo, or even fruit salsa like Mango Salsa. You can also do any of these toppings instead of my slaw.
- Grill the Fish: You can easily make these Grilled Fish Tacos by grilling the fish! Just heat your grill to medium-high and cook the fish for 10-15 minutes. You can also cook it in a cast iron skillet.
- Make it with Fruit Salsa: You can swap out the slaw for any of my 10 Fresh Fruit Salsa recipes for a slightly different and sweeter taste. The Pineapple Salsa, Mango Salsa, and Peach Salsa recipes would be super delicious.
- Use a Different Dressing: You can also mix up the dressing with my Avocado Lime Dressing or Chipotle Lime Ranch Dressing.
FAQ
Storage & Leftovers
These Mahi Mahi Tacos are best served fresh, but you can store the assembled pieces in an airtight container in the refridgerator for up to three days.
Can I make these Mahi Mahi Fish Tacos ahead of time?
I think these Mahi Mahi Fish Tacos taste best when served right when they are made. If you do need to make them ahead of time just make them and store the fish, chipotle sauce for fish tacos, and slaw separately. Store them unassembled in the fridge and when it's time to serve them make them fresh. They will get soggy if you make them ahead of time.
Can I freeze this recipe?
I would not recommend freezing this recipe.
Is Mahi or Cod better for fish tacos?
Both fish work great for fish tacos, but I like the dense mahi mahi for these tacos better! US-caught Mahi Mahi is a great seafood choice because it has lean protein and is less expensive than other fish like halibut. It's also good for fishing sustainability because it's not over-fished.

Holy yum!!!! Love fish tacos, especially when there is tasty slaw involved. Definitely giving these a shot next week. I alternate back and forth between Mexican and Italian. But lately I have been craving Mediterranean food too. I guess I'm all over the place. 😉
