Aren't pancakes just the best? The hubs and I eat them for breakfast once over the weekend. He cooks them and I'm border lined obsessed with them. He honestly uses a pancake mix, but he doctors them up with all sorts of goodies. They taste amazing and I let him do his thing. You've probably seen me share a few on Instagram Stories in the past few months. His pancakes will always be my favorite ever.

On occasion I take over the pancake reigns OR we are having breakfast for dinner. One of my favorite ways to mix it up is making a healthier version of pancakes (without the mix) using thick, creamy and protein packed greek yogurt. Adding it makes for one delicious recipe for apple pancakes.
Yes! These Apple Pie Greek Yogurt Pancakes Healthy are legit! Look at that syyyyyrrrrrruuuuuppppppp!
The batter is simple and easy to throw together. I use ingredients I always keep on hand, and I suggest you do the same to have a nicely stocked pantry and fridge.
The trick to making them apple-yyyyy is GRATING the apple. That way each bite gets a little flavor punch without adding too much work to the recipe. I used an extra sweet and juicy honey crisp apple for recipe testing.
These babies are just sweet enough. My Apple Pie Greek Yogurt Pancakes Healthy use a small amount of coconut sugar. I also tested them with honey, but I felt the coconut sugar gave it more of an apple pie punch. I also tested them with white wheat flour which also works, although I ended up settling on the white for the recipe. It just depends on how healthy vs "pie" like you want them to taste.
This way is rich, satisfying and decadent.
Can't ya just imagine digging into that on Saturday morning!
You can also make a big batch and freeze them, or just enjoy a lovely weekend treat with a healthier twist!

Healthy Apple Pie Greek Yogurt Pancakes
Ingredients
- 1 egg
- ½ cup vanilla greek yogurt
- ½ cup milk, I tested with 2%
- 2 teaspoons vanilla extract
- 1 cup all purpose flour
- 1 ½ teaspoon baking powder
- ¼ cup coconut sugar
- 3 teaspoons cinnamon
- ½ teaspoon nutmeg
- ⅛ teaspoon salt
- 1 cup grated apple
- cooking spray
Instructions
- Mix the egg, yogurt, milk and vanilla in bowl.
- Add the dry ingredients and in the same bowl and mix together until well combined. Fold in the grated apple.
- Heat a non-stick skillet to medium low. Spray cooking spray on it.
- Pour about a quarter cup of the batter for each pancake. Allow to cook 2-3 minutes or until bubbles start appearing in the middle.
- Flip and allow to finish cooking on the other side.
- Serve with your favorite syrup, walnuts and apple slices.
Notes
You can sub 2 tablespoons of honey for the coconut sugar and use whole wheat flour.

Unlike the comments, I’ve read to date… I actually made these apple pancakes! Melting a pat of butter when serving these is practically guilt free beings as no oil was used.
2-suggestions:
*thin them out in the pan as much as possible, these yield thick cakes
*Thinner helps cook out the moist apples which can give the illusion of under-cooked batter. (my honey-crisps were coarsely grated, need to experiment with a finer grate)
