I made these for the twins and they helped with the toppings and gobbled them up. They are great to serve as an after-school snack for kids or even a fun evening snack or appetizer for adults. The flavors of peanut butter, apples and fun topping are so delightful.
The base for these apple snacks is good old-fashioned apples, which are a nutritional powerhouse. One medium apple has fiber, vitamin C, copper, potassium, and vitamin K. Apples are also a great source of polyphenols, which are important antioxidants. Apples are also heart-healthy, linked to a lower risk of diabetes, and may improve gut health.
I cut the apples to look like fun round cookies or donuts and top the healthy apples with filling peanut butter and fun kid-friendly toppings like sprinkles, coconut, and dried fruit. Whether you call them Apple Donuts or Apple Cookies... they are sure to be a hit and a treat for everyone at the table.

- Apples: Use your favorite type of fresh apples for this. I prefer red ones for the color and ones that are firmer and sweeter. My favorites are Honeycrisp, Gala, or Fuji, but you can use whatever type you happen to have on hand. To prep them, wash and dry them.
- Peanut Butter: Use your favorite type of creamy or natural peanut butter. You can even use sunflower, almond, or any other type of nut butter for a peanut-free or allergy-friendly recipe.
- Optional: If not eating these right when you cut them, you can soak the apples in

- Wash and dry the apples.
- Using a sharp knife, cut the apples into flat circles. Use a small melon baller to scoop out the center of the core to make a cookie or donut shape.
- Spread the peanut butter on the top of each slice.
- Sprinkle on the toppings of choice.
- Serve immediately.
Variations
I love these Apple Snacks as shown, but here are some other fun ways to serve them.
- Use Greek Yogurt: Instead of peanut butter, use greek yogurt for a tangy and healthy apple snack.
- Change the Apple Shape: You can also make apple wedges and add the toppings or use cookie cutters to cut different fun shapes out of the cut apples.
- Use Nutella or Caramel: For a more indulgent snack, spread the apples with Nutella or caramel and then add the toppings.
- Make a Sandwich: Stack two apple slices with peanut butter and toppings in between.

What kind of apples work best for apple snacks?
I like using sweeter apples for apple snacks like Honeycrisp, Fuji, or Gala. Slightly crisp and firm apples also work better, however, you can use any type you have on hand.
How do I make these ahead of time?
You can do most of the prep work to make these ahead of time by cutting the apples. To keep the apples from turning brown, soak the cut apples in a mixture of lemon juice and water and then pat them dry. For the best texture spread the peanut butter and sprinkle the topping just before serving.
How do I store leftovers?
These are best served fresh, however, you can store leftovers in an airtight container in the refrigerator for one day. Follow the directions above with lemon juice to keep the apples from turning brown.
