Many buffalo dips have chicken, but mine swaps out sweet tender shrimp to make it pescatarian friendly AND uses Greek yogurt instead of mayo for a healthy swap. With a rich combo of creamy cream cheese, blue cheese, greek yogurt, and mozzarella, this unexpected hot shrimp dip is pure perfection in a pan. This is so tasty, it just happens to be one of my all-time favorite recipes on my site.

- Shrimp: You'll need raw, peeled, and deviled shrimp. The medium ones will work fine for this because you will dice them. Chop them into small enough pieces to be easily picked up by dippers. You can save money by buying smaller shrimp because you are chopping them up anyway.
- Olive Oil or Butter: You'll need a small amount to saute the shrimp.
- Cream Cheese: You can use light or full fat... whatever floats your boat. I can't taste a big difference between the two so I use light. The cream cheese makes the shrimp dip nice and creamy.
- Mozzarella Cheese: Mozzarella cheese gives us that super cheesy flavor. You can honestly swap out any of your favorite cheeses like sharp cheddar cheese, pepper jack, gouda, or even gruyere.
- Greek Yogurt: Most recipes call for sour cream or mayonnaise but I sub greek yogurt for a lighter dip. Sour cream or mayo will work in it's place.
- Franks Buffalo Sauce: I love THIS one. The recipe calls for a half cup of the hot sauce. If you like it spicier you can add up to ¾ of a cup. I think a half cup is just enough heat for lots of flavor without burning your mouth.
- Green Onions: These add some flavor and brightness to the Buffalo Shrimp Dip! You could also use fresh parsley.
- Blue Cheese Crumbles: You HAVE to have Blue Cheese with anything buffalo... right?

- Preheat the oven to 425 degrees and spray a 9x9 baking dish with cooking spray.
- In a saute pan, heat the oil or butter to medium heat. Saute your shrimp for 2-3 minutes until about 75% cooked. Sprinkle with a pinch of salt and pepper. They will finish cooking in the casserole dish.
- Mix together the cream cheese, mozzarella, greek yogurt, and hot sauce. I use my stand mixer but you could do it by hand with a little bit of elbow grease. You'll want this to be well combined.
- Fold in the cooked shrimp, green onions, and blue cheese at the end.
- Spread the mixture in the casserole dish.
- Bake in the oven for 20 minutes.
- Sprinkle with extra blue cheese crumbles and green onion.

- Make it Golden: To get a golden crust on top turn on the broiler at the end of cooking for a few minutes.
- Make it Cheesy: Mix up the cheese! A rich sharp cheddar in place of the mozzarella is also good.
- Make it Crabby: Add crab to the dip to make it a crab dip.
- Add Spinach: Stir in some fresh spinach for a green touch.

Freezing
I would not recommend freezing this recipe.
Make Ahead
You can make and assemble this casserole ahead of time, up to 24 hours in advance. Cover it and store it in the refrigerator. Bake when you are ready to eat. The only trick is to allow the casserole dish to come to room temperature for 30 minutes before baking or you risk cracking your casserole dish and it will take longer to bake.

Instructions
- Preheat the oven to 425 degrees and spray a 9x9 baking dish with cooking spray.

- Bake for 20 minutes. The get the top golden brown turn on the broiler for a few minutes at the end.
