What's the trick for Deviled Eggs?
- There are two tricks for making perfect Deviled Egg recipes. The first is to properly hard-boil the eggs so that they peel well without blemishes in the egg white. The biggest trick I use is to use regular white eggs that have been sitting in the fridge for at least a week. The older the eggs, the less of a bond the egg protein has to the shell, allowing it to peel easier. Follow my instructions below to boil the eggs after that.
- The second trick is to use a piping bag to re-fill the eggs. Once you mix the egg yolk mixture, you can put it into the bag and easily refill the eggs with ease. It's what makes it look pretty too! They are inexpensive to buy, but a great tool to have in the kitchen. You can also take the filling from the bowl with a spoon or a plastic bag, but the piping bag is easier and makes the top pretty.
Is it better to make deviled eggs the day before or the day of?
I think deviled eggs are best made right before a party. If you need to make them ahead, you can make the recipe up to where you pipe the yolk mixture back into the eggs a day ahead. When you are ready to serve the eggs, pipe the yolk mixture in and add the decoration. You can assemble the entire deviled egg anywhere from 12-24 hours before your party. I would not assemble them before that though.
