Help me celebrate with this birthday popcorn recipe!

If you guessed that my birthday is on Sunday... You guessed right! lol!
To celebrate I decided to create a festive birthday popcorn recipe that you can use for your birthday this year or give to one of your friends as an edible gift. It's a full on salty-sweet celebration in a cup.
To make it just pop your favorite popcorn and then drizzle the kernels with dark chocolate. Before the chocolate sets, add some colorful sprinkles and some chocolate candies. We are celebrating after all!
Allow the chocolate to reset and then break it apart like a chocolate bark.
I used all sorts of fun pastel colors but you could tailor this to whoever you're making it for.
My birthday popcorn recipe is the perfect combination of salty and sweet. Add a candle if you really want to impress.
It's too bad we can't have one big blog party and serve up a big batch of this Birthday Popcorn recipe!
To celebrate my birthday this year I'm actually heading to Hilton Head Island tomorrow for a little R&R. Yes I'm finally getting my beach trip this summer! My plans are to sit on the beach and eat really, really well. When I first booked this trip I thought I'd be doing some beach yoga and bike riding... but with my arm I'll probably just be sitting on the beach... which honestly sounds just about perfect.
I'll be sharing some of the highlights via Instagram & Instagram Stories while I'm gone, but I will be taking the day off tomorrow from blog posting to celebrate.
I hope you guys enjoy one of your last weekends of summer as well. Have a batch of this popcorn and honor of my big day!
Birthday Popcorn
Ingredients
- 5 cups popped popcorn
- ½ cup dark chocolate chips
- ¼ cup pastel M&M's
- 1 tablespoon pastel rainbow sprinkles
Instructions
- Spread the popcorn in a single layer on a cookie sheet.
- Melt the chocolate in the microwave by heating for 15 seconds at a time. Stir in between heating sessions. Stop with it is melted and smooth. Be careful not to burn.
- Drizzle the melted chocolate over the popcorn.
- While the chocolate is still sticky, sprinkle the sprinkles and M&M's on top... making sure to hit the chocolate areas so it will stick.
