Keep it super simple with a storebought blackening seasoning or easily whip up your own with my Homemade Blackening Seasoning, which is a perfect blend of smoked paprika, onion powder, garlic powder, cayenne pepper, and oregano.
Traditional blackened recipes are made on the stovetop with a cast iron skillet, which can be a bit messy and not as healthy, so my version is simply baked in the oven creating a fuss-free seafood experience for the family.

- Shrimp: You'll need at least large shrimp which are 26-30 a pound. You can also use extra large or jumbo shrimp but they will need up to a minute more to cook. For easy prep, buy ones that are already peeled and deveined. I left the tails on for the photos, but you can remove them to eat them easier, especially if you are serving them to kids. Don't be afraid of frozen shrimp, as most shrimp are frozen right after they are caught or harvested anyway. If your shrimp are frozen, thaw them out in the fridge overnight or put them in a ziplock bag in a colander of water. Pat them dry with a paper towel before starting the recipe.
- Butter: Classic blackened recipes use butter instead of olive oil, so that's what I use here. It's a small amount. I melt it in the microwave so it evenly coats the shrimp before baking. You can also swap out olive oil, avocado oil, or your favorite cooking oil.
- Blackened Seasoning: I use my homemade Blackened Seasoning, which is a blend of smoked paprika, onion powder, garlic powder, cayenne pepper, and oregano. You can also use storebought blackening seasoning. This recipe calls for 2 tablespoons of the blackening seasoning, which makes these shrimp kid-friendly, but if you like it extra blackened you can add 1 or 2 tablespoons more. You can also substitute cajun seasoning.
- Salt and Black Pepper: The amount of salt and pepper in blackening seasoning can widely vary. If your blackening seasoning has a lot of salt and pepper, you will not need to add much more.

- Preheat your oven to 425 degrees. Spray a baking sheet with cooking spray. For easy cleanup, you can even line your baking sheet with foil.
- Pat the shrimp with a paper towel to dry them off.
- In a medium bowl, add the shrimp, melted butter, and blackening seasoning. Mix well by tossing it gently.
- Pour the shrimp onto the baking sheet and evenly space them out. Cook for 3-5 minutes until the shrimp turn opaque and start to curl.

Tips for Cooking Shrimp:
- Shrimp cooks fast and once they start to curl, they are done. If they curl up tightly they are overdone.
- They only need to reach about 120 degrees, unlike other meats.
- Don't overcook them or they will be tough.
- They'll turn from blue-green to opaque pink below.
- They will continue to cook when you pull them out of the oven, so when in doubt pull them out. This is what they should look like below!
Variations
I love this Baked Blackened Shrimp recipe as written, but here are some fun variations.
- Make it Spicy: Add more cayenne seasoning.
- Make it Dairy-Free: Use olive oil or dairy-free butter.
- Make a Big Batch: Easily double or triple the recipe for a crowd by clicking on the 2X or 3X on the recipe card.
- Make it on the Stove Top: Heat a cast iron large skillet to medium-high heat. Melt your butter. Add the shrimp to the pan and sear until the shrimp turn pink and opaque which should be about 3-4 minutes.
- Makie it on the Grill: You can also grill these by putting them in a grilling pan and cooking over medium heat for 3-4 minutes until done. You can also put them on skewers and cook the same way.
FAQ
Storage & Leftovers
Store any leftovers in an airtight container in the fridge for up to three days. Reheat in 30-second increments in the microwave, just until warm. Don't overcook it.
Freezing
I don't recommend freezing this because the shrimp have most likely already been frozen.
How many calories are in Blackened Shrimp?
Blackened Shrimp prepared this way are super healthy, low calorie, and high protein. My version is only 210 calories.
How do you keep shrimp from getting mushy?
Shrimp can get mushy when you soak them in water to defrost them. They also can get mushy if you cook them too slowly or overcook them. Also shrimp not cooked within a day or two of thawing them out can turn mushy.
