It's officially summer now. 🙂 The season is a magical time in my mind. From the long warm evenings, fireflys and fresh plump berries... the season holds a special place in my heart.
One of my favorite things to do in the summer is head up the Blue Ridge Parkway to Graveyard fields and blueberry pick. Wild blueberry season is later in August and it's literally a wild experience. You've never seen so many berries in your life and so many people are up there with gallon jugs. There are hiking trails through the winds and some even lead to cool and brisk waterfalls. The berries are little but bursting with sweet intense flavor.
You just have to watch out for snakes and bears! haha!
Anyways, if you are ever in the Asheville mountains around mid-late August I recommend it, wild animals aside. I also recommend my Blueberry Pie Overnight Oats!
No, no it's not EXACTLY like pie but it sure makes one delicious, healthy breakfast.
And you really can't go wrong with plump blueberries... even if they are just the type bought at the store.
For the Blueberry Pie Overnight Oats I kept the actual oatmeal pretty simple. The flavor comes from a small container of your favorite blueberry greek yogurt. You layer it in the middle and add some sweet berries.
The top is another dollop of that yogurt and a sprinkle of granola for a crunch.
You can go to the trouble to serve it piled high in a mason jar, or just put it all in a bowl. I promise it tastes the same either way.
This is exactly how I'll be eating my blueberries all summer. Enjoy!
Blueberry Pie Overnight Oats
Ingredients
- 1 cup old fashioned oats
- 1 cup unsweetened vanilla almond almond milk
- 1 small container Greek blueberry yogurt
- 1 handful fresh blueberries
- 1 tablespoon granola
Instructions
- Mix the oats and almond in a container and allow to sit overnight.
- In the morning layer the oats, blueberry Greek yogurt and fresh berries.
- Top with the granola!

Julie, I share the same affinity for all things summer and blueberry picking! I've never experienced the wild blueberry picking you mentioned with snakes and bears but like they say...no risk no reward and what doesn't kill you makes you stronger.
