I do something very similar, especially on Thanksgiving or Christmas when I want an easy, quick breakfast before the 'real' cooking begins. One change I've made, I use EGG NOG instead of milk. You can also cut down or eliminate the cinnamon and vanilla (to taste, of course). Since that's the only time of the year you can buy egg nog, and since my family thinks it's just part of the holidays, this always goes over good. It's almost a 'bread pudding' recipe, too.
