It's made with a blend of gluten-free almond flour, maple syrup and cottage cheese to make the most rich and decadent healthy bananas bread you will try. You'll surprise anyone you serve it to that this isn't a sugar and butter loaded loaf. I gave this to my twins and they gobbled it up in a day, while asking me to make it again.

When bananas get spotted and even turning brown, they naturally are sweeter and softer making them better for baking. The natural sweetness is the highest when they don't look the best. You should be able to easily mash them with a fork and if you are having trouble, they probably aren't ripe enough.
- Cottage Cheese: Cottage Cheese is the magical ingredient for this bread, giving it a lot of moisture without butter or oil. You can use full-fat cottage cheese or low fat depending on your diet. Full fat will the banana bread more flavor, but both will work.
- Eggs: Eggs bind everything together. You'll need 3 large eggs.
- Maple Syrup: Instead of using traditional sugar, I like to use maple syrup in this. If you are trying to make this lower sugar, you can reduce the maple syrup.
- Vanilla Extract: Vanilla balances out the flavors.
- Almond Flour: Almond flour is basically ground up almonds. It's It gives recipes a nutty and fluffy textures and is gluten-free. It is not a 1:1 substitute for other flours, so you will need to adjust the amount of flour if trying to make this with regular flour. - Start by prepping the bananas by mashing them with a fork.
- Start with the wet ingredients. In a food processor or blender blend the cottage cheese until smooth. Add the eggs, maple syrup and vanilla to the food processer an mix together. Stir in the mashed banana by hand.
- Next mix the dry ingredients. In a large bowl, mix together by hand the almond flour, cinnamon, nutmeg, baking soda and baking powder.
- Add the cottage cheese and banana mixture to the flour bowl and mix until combined. If desired, fold in the chocolate chips.
- Pour the batter into a loaf pan.
