The other consideration is the full-fat cottage cheese will melt a bit easier in the microwave.
- Cheddar Cheese: You'll want shredded cheddar cheese. If you shred your cheese, it will melt better, but I have made it with store-bought shredded cheddar and it worked fine. You can also substitute pepper jack, Mexican blend cheese, or Colby jack.
- Green Chilies: The small 4-ounce can of green chilies is my magical addition to this recipe. It gives the queso a lot of depth of flavor, without much work. It's not spicy, just flavorful.
- Taco Seasoning: I make my own Taco Seasoning with this recipe, but you can buy your favorite store-bought taco seasoning. It's a combination of chili powder, ground cumin, garlic powder, onion powder, smoked paprika, and chipotle pepper.
- Optional Garnish: Cilantro, Pico de Gallo, diced tomatoes, or Salsa
