Ingredients
- 3 pounds red potatoes, sliced in ¼ thick half moons
- 2 tablespoons olive oil
- 1 small lemon, juiced
- 2 tablespoons fresh Rosemary- chopped, or 2 teaspoons dried rosemary
- 2 teaspoons minced garlic
- ¼- ½ teaspoon salt, adjust to taste
- ¼- ½ teaspoon pepper, adjust to taste
- optional garnish: fresh parsley
Instructions
- Toss all the ingredients in the Crock Pot and stir well. Start with ¼ teaspoon of salt and adjust to taste.
- Cook on low for 5-6 hours or high for 2-3 hours. Stir occasionally.

Hi Angela, I added 6-8 servings for the recipe. Unless you want leftovers I would not double it. I'm not sure it would fit in a crock pot doubled either. Enjoy!

What a good idea, I've never thought of making them on their own in the crockpot, without a stew or something. I don't have room for a grill, but I do use my crock pot in the summer for things like cooking beans and meat. Basil is easily my favorite herb- I LOVE pesto.
