This Sweet Potato Black Bean Chili crock pot recipe is such a fabulous variation from traditional chili. It's filled with hearty fresh sweet potatoes, canned black beans, canned tomatoes, onion and bell pepper. It's a super healthy, filling meal that is both vegan and vegetarian. This recipe has directions to make it in the slow cooker or stove top.
The biggest surprise with this twist on chili is the Mexican/ Southwest inspired flavors, which give this a different feel from regular chili, like my Award Winning Vegetarian Chili I used traditional my homemade chili powder but also a healthy dose of my homemade DIY Mexican/Taco Seasoning Blend. I make this and keep it in my pantry all the time.
To stay with the flavor theme I added cilantro and lime on top! The fresh green gives this chili a POP you just can't ignore. As shown this chili is vegan but you could easily add sour cream/ plain Greek yogurt and cheese if you'd like!

- Sweet Potato: Sweet potatoes give this chili a rich orange color. You will need 2-3 large sweet potatoes to get the 6 cups of diced sweet potatoes needed for the recipe. I peel the potatoes for this recipe, but that is personal preference. You can leave them on. You will need a good Chef's Knife to cut the sweet potatoes raw. You could also make this with butternut squash.
- Canned Black Beans: Canned black beans is another easy pantry staple that makes this recipe thick and hearty. I used reduced sodium ones. You will need to rinse and drain them before using them.
- Canned Tomato: Canned diced tomatoes are a great way to get the tomato flavor into this chili. Do not drain the tomatoes. You can also substitute fire-roasted tomatoes or even rotel.
- Garlic: Fresh garlic gives this soup a depth of flavor.
- Bell Pepper: You'll need one diced bell pepper for this Sweet Potato Black Bean Chili. You can use whatever color you like or have.
- Onion: A diced onion gives this chili a rich flavor.
- Vegetable Broth: I like to use vegetable broth for this to keep the soup vegetarian.
- Chili Powder: You can use your favorite chili powder or use my homemade DIY Chili Seasoning with chili powder, ground cumin, garlic powder, and chipotle pepper.

Crock Pot Directions:
- Add the diced sweet potato, bell pepper, onion, garlic, black beans, tomatoes, vegetable broth and spices to your crock pot.

Over medium heat, cook the onion and pepper until it's tender for about 4-5 minutes. Add the garlic and sauté for just 30 seconds, being carful not to burn it.
- Add the sweet potatoes, canned black beans, vegetable broth, chili powder and mexican seasoning. Salt and pepper to taste. Stir well.
- Bring the soup to a boil and stir.
- Reduce the heat to a simmer and cook for 10-15 minutes until the sweet potatoes are tender.
- Spoon the soup into a bowl and serve with cilantro, lime and avocado.
