Rhett and Reina have been crawling on the walls since the sky started falling Sunday. I have too… It’s treadmill runs all week so far. I know it can’t be 70 and sunny all the time, but what a mess! I'm glad the sun is back.
Now back to the “business” of this post… What do you think of crockpot cooking?
I love the way it fits in my schedule and can take so much time out of the actual hands on cooking process. I think the meals may require a little more planning and prep work ahead of time, but when it all comes together Crock Pots can be a quick and great tool for a busy family of any size.
The mastermind of one of my favorite blogs, Julie from Peanut Butter Fingers, recently challenged her readers and fellow bloggers to a “Crockpot Challenge.” The rules are simple; make 10 new Crock Pot recipes before the end of February and share them on your blog. The idea is to get a bunch of great Crock Pot recipes out in the blogosphere for the new year.
Well, I’m in! I’m planning on starting with a healthy, veggie filled soup with a fresh herb taste. I just need to make it to the grocery store- sigh. Running out of town last weekend left me very behind! I decided it wasn't worth facing the “milk and bread” crowds yesterday.
My only challenge is finding good vegetarian or pescatarian (fish or seafood) recipes. I’m finding that the most popular slow cooker recipes are meat based. I’m up for the challenge though and will share the concoctions I make with you—good or bad. Hopefully the hubby will not be eating too much strange food over the next month and a half! Wish me luck

LOVE my crock pot and my Dutch oven use them both a lot all year
Favorites for the Dutch oven is a pork roast that was my friend grandma's and the dutch oven is a WW potato soup. Love them both

I have been running on the treadmill and using the elliptical but today I got to run outside in the beautiful sunshine. I love cooking in the crockpot. I put the weight watchers taco soup in the crockpot and it is amazing. But it has hamburger meat, I don't know what you could leave out to make it vegetarian.

I've run in the rain this week. On Wednesday, there was a short time that it was just overcast or sprinkling, and i took that as my chance to run outside. Otherwise, I've been adding in more indoors workouts (dvds, weights.)
My husband makes a great vegetarian chili and right now I can't think of the recipe off the top of my head. I know it's not the healthiest, though. Other than that, we tend to make a lot of soups and meat-based meals (sorry I can't be of much help there!)
