Weekends mean one thing in my house.... pancakes! Hardly a weekend goes by without a stack of the good stuff. Usually the Hubs is in charge, which I love. And yes, I know how lucky I am.
One of my favorite ways to mix it up is with my Healthy Greek Yogurt Blueberry Pancakes recipe. I mean you can never go wrong when big, plump bluebs are involved. They are like little antioxidant powerhouses!
The secret to this yummy Healthy Greek Yogurt Blueberry Pancakes recipe is a cup of delicious vanilla greek yogurt. It adds a smooth creamy flavor AND adds some protein to stack.
I also add a touch of cinnamon sugar to the recipe to bring out the flavors BUT I made a note in the recipe to use honey instead if you prefer that.
The ripe blueberries do the rest.
Serve the stack by itself or with your favorite syrup. You could even do another dollop of greek yogurt on top for a topping if you are staying away from syrup-y things.
Me though... I just can't resist a pool of the good stuff.
This stack is sure to please even picky eaters and no one will know the tricks you made to make it just a little healthier.
Now who can resist that.... right?

Ingredients
- 1 egg
- ½ cup vanilla greek yogurt
- ½ cup milk, I tested with 2%
- 2 teaspoons vanilla extract
- 1 cup white wheat flour
- 1 ½ teaspoon baking powder
- ¼ cup coconut sugar
- 2 teaspoons cinnamon
- ⅛ teaspoon salt
- 1 cup blueberries
- cooking spray
Instructions
- Mix the egg, yogurt, milk and vanilla in bowl.
- Add the dry ingredients (flour, baking powder, coconut sugar, cinnamon and salt) in the same bowl and mix together until well combined.
- Heat a non-stick skillet to medium low. Spray cooking spray on it.
- Pour about a quarter cup of the batter for each pancake. Drop your blueberries into the pancakes to allow for even spacing. Allow to cook 2-3 minutes or until bubbles start appearing in the middle.
- Flip and allow to finish cooking on the other side.
- Serve with your favorite syrup, fruit or yogurt.

Made these this past Saturday. Absolutely YUMMY! Didn't tell hubby that it contained Greek yogurt until he had 4 pancakes. He's now hooked. BTW, I used plain Greek yogurt. Do you use the vanilla-flavored kind?

best way? Get them once my wife makes them...though she has been known to cook blueberries and peaches together for a syrup...great now I want pancakes or Belgian waffles for dinner (thought about making Belgian waffles when the US played Belgium) as far as one more for mile after six...that'd make for a huge stack during marathon training

Julie, I followed your directions for the pancakes, but the batter was very thick and heavy. Is there a liquid or oil that should be added as well?

I love the idea of adding on a pancake per mile - very smart : ) I also love the idea of adding Greek yogurt to the pancakes for extra protein. Pancakes always win out for me. Although, I won't turn away a waffle either!
