Marinade:
- Olive Oil: Olive oil is a great base for this marinade. It will also help keep the steak from sticking to the grill.
- Honey: A touch of honey adds some sweetness and balances the acid in the dish. To easily make this vegan, swap out this for maple syrup.
- Lemon: Use one fresh lemon juice for great flavor.
- Spices: A nice blend of spices like garlic powder, onion powder, chipotle pepper powder, and smoked paprika give the cauliflower steak lots of savory and smoky flavor.
- Kosher Salt and Black Pepper

- In a ziplock bag, mix together the marinade.
- Put the cauliflower steaks inside the mixture and cover them well. Allow marinating for 30 minutes or longer.
- Prepare the Green Goddess Sauce by putting all the ingredients - olive oil, greek yogurt, chives, parsley, basil, garlic, and lemon - in a blender, chopper, or food processor. Mix well until you get a smooth sauce. You can prepare this ahead of time and let the flavors mix together.
For Grilling the Cauliflower Steaks:
- Heat grill to medium.
- Grill thick slices of cauliflower over medium heat for 5-7 minutes on each side until tender and you have excellent grill marks and color. You can brush both sides of the cauliflower steak with any of the remaining marinades on the steak. They will be fork tender when done.
- Plate and serve with the Green Goddess Sauce. Garnish with a sprinkle of fresh parsley and lemons.
How to Cut Cauliflower Steaks
To make the steaks you'll need a sharp knife and cutting board. Find a nice cauliflower head that is firm and dense. First, trim the bottom stem of the cauliflower and any of the leaves so you have a flat base. Next, cut the cauliflower in half. Then carefully slice two 1-inch steaks from each side.
Most heads of cauliflower will give you two good steaks, sometimes you can sneak out a third one. You'll have extra leftover cauliflower florets. Save them and make another recipe with them. Here are some ideas on what to do with the leftovers.

- Heat grill to medium.
- Grill cauliflower over medium heat for 5-7 minutes on each side until tender and you have nice grill marks and color. You can brush any of the remaining marinades on the steak. Don't move the cauliflower once you put it on grill to get the grill marks.
- Plate and serve with the sauce. Garnish with fresh parsley and lemons.
- Serve immediately with the sauce!
