Here's an overview of what you'll need to make the Grilled Vegetable Sandwich with Herbed Goat Cheese, but keep reading for the printable recipe with the full directions.
For the Grilled Vegetable Sandwich:
- Portobello Mushrooms: For the Grilled Vegetable Sandwich, I used thick and large portobello mushroom caps. Slice them into quarter-inch thick slices.
- Bell Pepper: You can use any color of bell pepper you like, but I picked a red pepper for the pop of color. Cut the peppers into similar-sized slices. You don't want them too small or they will just fall out of the sandwich.
- Zucchini: I like finding a zucchini that's about the same width as the sandwich bread you are using. Cut the ends off and slice them into large, flat slices that will fill the sandwich.
- Olive Oil: You'll need just a touch of olive oil to grill the vegetables.
- Salt & Black Pepper
- Spinach: I like to start my grilled vegetable sandwich with some greens! Spinach is my favorite. You could also use green leaf lettuce or even sprouts.
- Bread: You'll need either eight slices of hearty, soft bread or four large rolls like ciabatta bread. You could even use a baguette. The bread is a huge part of the sandwich, so get something good from the bakery. I might have gotten a little overzealous with my slices of bread here. I was going for dramatic effect. Feel free to slice your bread normal size 🙂
For the Herbed Goat Cheese:
- Goat Cheese: Find a rich and creamy plain goat cheese. Before mixing it, remove the cheese from the fridge and allow it to soften a touch.
- Fresh Herbs: You can use your favorite fresh herbs, but I really like a combination of chives, basil, or oregano. Other delicious herbs would be green onions, dill, or rosemary. You could substitute dried, but it's not the same! If you happen to have some pesto, you could also mix that into the cheese. The fresh herbs really make this Grilled Vegetable Sandwich sparkle.
Instructions:
For the Grilled Vegetable Sandwich:
- Heat the grill to medium-high heat.
- Cut the vegetables and spread them out on a baking sheet. Brush them with olive oil and sprinkle on generously sprinkle salt and pepper.
- Place the vegetables on the grill and leave them. Flip them after 2-3 minutes. The mushrooms should be done in around 4-5 minutes. The bell pepper should be done in 5-7 minutes. You'll want the vegetables to be tender, but not soft or soggy.
- Remove the vegetables from the grill and put them back on your baking sheet.
Tips for Grilling Vegetables:
- To get the grill marks you need to put the vegetables on the grill and not move them. Not moving the vegetables gives you these pretty grill marks.
- Another trick for grilling vegetables is to sear them on high heat and then turn down the grill to finish cooking them.
- Larger pieces will take longer to cook. Unlike when you are grilling meats, you don't need to grill them to a certain temperature just eye-ball them for tenderness.
For the Herbed Goat Cheese:
- To make the Herbed Goat Cheese for your Grilled Vegetable Sandwich, remove the goat cheese from the fridge and allow it to soften.
- Chop your fresh herbs - chives, basil, and oregano.
- In a medium bowl, mix the goat cheese and herbs together.
- You can make this ahead of time and store it in the fridge until you are ready to make the sandwich.
To Assemble the Sandwich:
- Assembling your Grilled Vegetable Sandwich is easy! To start, if desired, grill, toast or warm your bread.
- Start with the bottom slice and put a few leaves of spinach on top.
- Carefully stack the grilled vegetables starting with the zucchini, mushrooms, and peppers.
- Spread the Herbed Goat Cheese on the top bread slice. Use a nice thick layer as shown below.
- Close the sandwich and serve immediately.

- Mix Up the Vegetables: You can use your favorite combination of grilled vegetables, or whatever you happen to have on hand or from the garden. Other yummy choices are Yellow Squash, Onion or Red Onion, Tomatoes, Eggplant, or Asparagus.
- Mix Up the Cheese: You can also make this ricotta cheese, cream cheese, or feta cheese.
- Make it a Vegan Version: You can either leave off the herbed goat cheese and sub hummus OR make the Herbed Goat Cheese with dairy-free cream cheese.
- Make it High Protein: Add a slice of grilled tofu into the mix.
- Make it Gluten Free: Use your favorite gluten-free bread.

Ingredients
For the Grilled Vegetable Sandwich:
- 6 ounces Portobello mushroom caps, sliced
- 1 red bell pepper, sliced
- 1 zucchini , sliced
- ½ tablespoon olive oil
- salt & pepper, to taste
- 8 slices of bread or 4 sandwich rolls
- ½ cup baby spinach
For the Herbed Goat Cheese:
- 4 ounces goat cheese, softened
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh chives, chopped
- ½ tablespoon fresh oregano, chopped
Instructions
For the Grilled Vegetable Sandwich:
- Preheat your grill to medium heat.
- Lay the vegetables out on a cookie sheet and brush them with olive oil. Season generously with salt and pepper.
- Place vegetables on the grill and don’t move them. Flip them after 2-3 minutes. The mushrooms and zucchini should be done in 4-5 minutes. The bell pepper should be done in 5-7 minutes. You want the vegetables to be tender, but not soggy.
- Assemble the sandwich. Start with the baby spinach, then add the vegetables. Spread the goat cheese over the top piece of bread and add it to the top. Serve immediately.
For the Herbed Goat Cheese:
- Mix all ingredients - goat cheese, basil, oregano, and chives- for the goat cheese. This can be done ahead of time or just before you make the sandwiches.
- Store the herbed goat cheese in the fridge for up to three days.
