These Healthy Lemon Poppy Seed Muffins are busting with lemon goodness, soft, fluffy, and just perfectly tangy from the greek yogurt I used to make them.
I love making these muffins as the first spring flowers come up to celebrate the new season. There is really nothing like lemon desserts this time of year and this delightful recipe is the perfect one to start with because they are filled to the brim with lemon flavor.
In fact, my muffins are extra LEMON-Y because they feature THREE sources of lemon flavor: Lemon Juice, Lemon Zest, AND Lemon Extract!
Healthy Lemon Poppy Seed Muffins Made with Yogurt
These Healthy Lemon Poppy Seed Muffins taste delicious and are a bit better for you than a standard store-bought muffin or recipe. They feature some healthy swaps and are made with yogurt! I also used coconut oil for butter and honey for white sugar.
The base of the muffins is White Wheat Flour. Yes, it sounds like an oxymoron BUT I love using it for baking because it has the taste and texture of white flour but much more of the health benefits of whole wheat flour. Here's one to buy online!
You can substitute plain white flour in this recipe but I think the White Wheat Flour is perfect for making these healthier.

Many Lemon Poppy Seed Muffins are filled with refined sugar and white flour but these muffins are actually healthier for you with my healthy swaps. They come in around 200 calories a muffin.
Plus poppy seeds are more than just pretty decoration! These humble seeds actually have some surprising health benefits including a high nutritional value and an earthy, nutty flavor. They are a good source of dietary fiber, minerals (including calcium, phosphorus, iron, and zinc!) and can lower bad cholesterol.

- Flour: White Wheat Flour is the perfect flour to use for this recipe to keep it healthier without sacrificing flavor.
- Baking Soda & Baking Powder: You need just a touch of both of these for the muffins to get light and fluffy.
- Salt: Salt finishes out the dry ingredients and balances out the sweetness of the muffin.
- Eggs: Two eggs bind these muffins and keeps them together.
- Coconut Oil: Coconut oil brings a different taste to these muffins. Melt it and allow it to cool just a touch before using it.
- Honey: I substituted honey for white sugar in this Healthy Lemon Poppy Seed Muffin and it worked great!
- Greek Yogurt: Greek yogurt brings moisture and a tang to this recipe.
- Vanilla Extract: Vanilla extract brings out and compliments the flavors of the lemon.
- Lemon Extract: Lemon extract is my secret ingredient! It really adds a big lemon flavor punch!
- Lemon Juice: I used the juice from TWO lemons in this recipe.
- Lemon Zest: I also used the zest from two lemons to make these as lemony as possible. Pick up this easy-to-use Lemon Zester to get the job done.
- Poppy Seeds: These delightful seeds are not only a pretty addition to my muffins but they are good for you.
How to Make Healthy Lemon Poppy Seed Muffins:
- Preheat your oven to 350 degrees and spray your muffin pan with cooking spray. You can also use muffin liners, just spray those as well.
- In a medium bowl mix together the dry ingredients including the white wheat flour, baking soda, baking powder, and salt.
- In a second bowl mix together your wet ingredients including the melted coconut oil, honey, eggs, plain greek yogurt, vanilla extract, lemon extract, and lemon juice.
- Fold the wet ingredients into the dry ingredients until well combined but don't overmix. Add the lemon zest and poppy seeds.
- Fill the muffin tins to about ΒΎ of the way full.
- Bake for 15-17 minutes or until a toothpick comes out clean.
Muffin Pro Tip: You'll want to melt your coconut oil and allow it to cool just enough to wear it doesn't try to cook your eggs but not enough to where it starts to turn solid again.

- You can use full fat or fat-free Greek yogurt for this recipe. The muffin will be a bit moister and decadent with full-fat yogurt, but it still works with fat-free yogurt. Pick the kind that fits your diet.
- Don't overmix or overbake these muffins. They don't need to be overworked.
- If you want an even MORE lemony muffin you can substitute LEMON greek yogurt for plain Greek yogurt.

Wow, easy and delicious. Be careful about adding in the coconut oil with the yogurt, mine solidified the melted oil. I would add the oil right at the last second before folding the wet into the dry
