This Healthy Vegetable Sheet Pan Frittata recipe has a few more ingredients than a lot of my recipes but the veggies make it totally worth it. PLUS you could easily swap ones out to make this more customizable. Kale and mushrooms would be great with this too.
Here is what I called for in my version...
- Onion
- Tomato
- Spinach
- Eggs
- Milk
- Ricotta
- Feta
- Garlic Powder
- Italian Seasoning
My favorite part of this recipe is the nice sprinkle of feta cheese on the top! It makes everything taste better.
The ricotta cheese gets mixed up in the eggs and makes them super light and fluffy.

Curious how to make eggs in the oven? It's actually super simple! This is the perfect recipe to start with.
- Turn on the oven and put the pan in the oven to preheat it.
- Saute your veggies in a pan.
- Whisk the eggs, milk, and ricotta together.
- Pull the pan out of the oven and pour the eggs into the pan. Lay the vegetables on top.
- Sprinkle with the feta!
- Bake until the eggs firm up.
Preheating the pan allows the eggs to set quickly and keeps them tender. Cooking the veggies beforehand also allows the eggs to set quickly and be fluffier.

Healthy Vegetable Sheet Pan Frittata recipe
Ingredients
- 1 teaspoon olive oil
- ½ cup onion, chopped
- 1 cup cherry tomatoes, halved
- 3 cups baby spinach, loosely packed
- ¼ teaspoon garlic powder
- 12 eggs
- 2 tablespoons milk
- ¼ cup ricotta
- 2 teaspoons italian seasoning
- 2 tablespoons feta
- salt and pepper
- cooking spray
Instructions
- Preheat the oven to 425 degrees and put a quarter sheet pan (9x13 inches) in the oven.
- In a large saute pan heat the olive oil over medium heat. Add the onion and saute a few minutes until starting to turn tender. Add the tomato and cook another couple of minutes until they start to break. Add the spinach and cook just until it starts to wilt. Generously sprinkle with salt, pepper, and garlic powder.
- While that's cooking whisk together the eggs, milk, ricotta and italliann seasoning. Then salt and pepper the mixture. I used ½ teaspon of each.
- Remove the sheet pan from the oven and spray with cooking spray. Pour the egg mixture into the pan and carefully spoon the veggie mixture on top. Sprinkle with the feta cheese.
- Bake for 10-12 minutes or until the eggs are cooked.
