Storage & Leftovers
Leftover almond pesto can be kept in an airtight container in the fridge for up to five days. If desired, you can put a thin layer of olive oil on top of the pesto to help prevent oxidizing.
Freezing
The almond pesto freezes well and would be so lovely to have in the winter. You can freeze it in ice cube trays, pop out the cubes, and then store it in plastic freezer bags.

Ingredients
- 3 cups packed basil
- ½ cup almonds
- ½ cup parmesan cheese, grated
- 1 teaspoon garlic, minced
- ½ cup extra virgin olive oil
- salt & pepper to taste

I LOVE pesto. My boyfriend is allergic to peanuts and tree nuts, so we can't use store-bought pesto (I haven't found a nut-free one that tastes good yet). But making your own pesto is soooo simple. I always just find a recipe online and leave out the nuts. I'll have to try this one!
