How to Make Coconut Rice
The brilliance of this recipe is it really doesn't take any more work than making a standard pot of rice. The flavors though totally pop and will make all your favorite Asian and Thai dishes come alive. Just think about the flavor POP you will get from any stir fry or curry. This rice is a simple dish that simply elevates your dinner.
What's in 3 Ingredient Coconut Rice?
I'm not counting the water and salt in my three ingredients. But this really is the simplest little recipe.
- Jasmine Rice: You'll want the classic long-grain rice for the best results. THIS is a great one.
- Coconut Milk: This recipe calls for a can of coconut milk NOT the type next to the almond and regular milk. You can use light or full fat, although the full fat will give you a much richer coconut flavor.
- Lime: I love some fresh lime juice in my for a zesty twist.
- Water: You use coconut milk AND water to cook the rice in. Equal portions of both give you the perfect well textured rice.
- Salt: Just a pinch is all you need.
You can also stir in shredded coconut for even more flavor!
How to Make Rice with Coconut Milk:
Wondering how to make coconut rice? It's super simple and can be ready in less than 30 minutes. Most of that is hand-off time too. The rice can be made either on the stove top OR the rice cooker. I've included both sets of instructions below.
How to Make Coconut Rice on the Stovetop:
- In a fine mesh sieve, rinse your rice until the cool water becomes clear. Rinsing the rice removes extra starch and gives you a better textured rice.
- Put the rice, coconut milk, water and salt in a pot with a lid. Uncovered turn to high heat and allow the rice mixture to come to a boil.
- Once the boil starts turn the heat to low and cover. Cook until the water is absorbed. Stir a few times to keep it from sticking.
- Fluff the rice and add any lime you want to taste.
- Garnish with lime slices and fresh cilantro.
How to Make Coconut Rice in the Rice Cooker:
- In a fine mesh sieve, rinse your rice until the cool water becomes clear.
- Put the rice, coconut milk, water and salt in a rice cooker and select "white rice."
- When the cycle is finished, fluff the rice and add any lime you want to taste.
- Garnish with lime slices and fresh cilantro.
Can I make coconut rice in an Instant Pot?
I wouldn't make coconut rice in an Instant Pot because the coconut milk can clog the pressure valve.

- If you want LOTS of coconut flavor stir in some shredded coconut after cooking.
- I prefer to make my recipe without sugar, but traditional coconut rice calls for that. Add it if you'd like!

How to Make Coconut Rice - 3 Ingredient Coconut Rice
Ingredients
- 2 cups jasmine rice
- 13.5 ounce can coconut milk
- 2 cups water
- ½ teaspoon salt
- 1 lime, juiced
- garnish: cilantro and lime slices
Instructions
Stovetop Method:
- Using a mesh sieve, rinse the rice until the water runs clear.
- In a pot on the stovetop combine the water, coconut milk, rice and salt. Stir together. Bring to a boil.
- Once the pot reaches a boil, cover the pot and reduce the heat to simmer.
- Allow to cook until the liquid absorbs. It should be about 20 minutes. Stir occasionally to keep it from sticking to the bottom of the pot.
- Once it's done cooking add the lime to taste. Garnish with lime slices and fresh cilantro.
Rice Cooker Method:
- Using a mesh sieve, rinse the rice until the water runs clear.
- Put the water, coconut milk, rice and salt in a rice cooker and select "white rice."
- When the cycle is finished, fluff the rice and add any lime to tase. Garnish with lime slices and fresh cilantro.
