Peach Cobber Overnight Oats
Peaches have been spectacular this year and they are still wowing me. They have been perfectly sweet, plump, and oh so delicious. This fruitaholic has been in foodie heaven. Since they taste so good this year, I had to add them to my favorite healthy breakfast, Peach Cobbler Overnight Oats.
The Hubs likes his peaches barely ripe and hard but I like mine when they are soft and super sweet. But honestly either way the peaches this year have tasted amazing.
Since the peaches have tasted so good, that inspired me to create another peach recipe. Last week I made my Grilled Peach Caprese Salad, and now I'm sharing a great healthy breakfast idea. My peach cobbler overnight oats are the perfect fast breakfast that you can enjoy as long as these beauties are in season.

If you haven't tried overnight oats yet, it's basically a basic recipe of soaking old-fashioned oats with some sort of milk overnight. Most recipes (including this one) include adding creamy Greek yogurt and chia seeds. To make this basic recipe more exciting I'll often add fruit (like peaches!) to create a perfect Peach Overnight Oats.
This Peach Cobbler Overnight Oats recipe starts with my basic overnight oats starts with that basic recipe BUT adds lots of cinnamon, and vanilla yogurt to give it the same flavors you'll find in a cobbler.
Once you allow the oats to soak for the night, you stir in fresh chopped peaches. You can either stir in or top the overnight oats with creamy vanilla yogurt. The crunchy cobbler taste comes from adding some granola on the top.
And while I've been raving about fresh peaches you could also make this recipe in winter using frozen peaches if you are craving a taste of summer.
The combination is healthy, satisfying, filling, and an all-around great breakfast. There is protein and oats, chia seeds, and Greek yogurt plus plenty of sweetness from the fruit. I didn't feel the need to add any additional sweetener since the vanilla yogurt and almond milk already has some, but you could add some stevia or honey if you choose.

Here's what you'll need to make my Peach Cobbler Overnight Oats.
- Old Fashioned Oats: I like the texture of using traditional rolled oatmeal for my overnight oats. I think it holds up better to the overnight soaking than quick-cooking oats.
- Vanilla Almond Milk: You can use any sort of milk to make overnight oats, but I like the flavor and sweetness of vanilla almond milk for this recipe. I think it adds that little something extra to get it tasting like a peach cobbler.
- Vanilla Greek Yogurt: I love a rich vanilla bean greek yogurt to give this overnight oats recipe a rich, fresh-baked flavor. The slight sweetness of the almond milk and greek yogurt means you don't need to add an extra sweetener to this recipe.
- Peach: Fresh summer peaches can't be beaten for this recipe. If they are out of season you can use canned (find a no added sugar one) or frozen.
- Cinnamon: Cinnamon adds the perfect flavor to make this taste more like a baked good.
- Chia Seeds: Chia seeds are a superfood that adds antioxidants and extra protein to this healthy recipe. They also help you stay full longer.
- Toppings: You can include the optional toppings of a sprinkle of granola and more fresh peach slices. I think the crunch of the granola gives the oats the feeling of enjoying a fresh-baked peach cobbler.
How to Make Overnight Oats:
- In a mason jar or sealable container, stir together your oatmeal, almond milk, chia seeds, and cinnamon. Cover and store in the fridge overnight.
- In the morning mix in the yogurt and fresh peaches.
- Top with a sprinkle of granola and more fresh peach slices.

Do you eat overnight oats warm or cold?
You can enjoy this recipe chilled right out of the ridge OR you can warm them up for about 1 minute in the microwave before eating. Warm them up before adding the fresh peaches and yogurt.
Can I put canned peaches in overnight oats?
Although fresh peaches are best for this recipe, you can use canned peaches. I like to use ones that don't have added sugar.
Can these be vegan or gluten-free?
YES! To make them gluten-free use gluten-free oatmeal. To make them vegan use non-dairy milk and yogurt.
How do I store overnight oats?
You can store overnight oats in the same container you mixed them in for up to 3-4 days in the fridge. The texture is best within 24 hours of adding the milk to the oatmeal though.
Can you freeze overnight oats?
I would not recommend freezing overnight oats because the texture would not be the same. They would come out of the fridge mushy.

Peach Cobbler Overnight Oats
Ingredients
- 1 cup old fashioned oats
- 1 cup vanilla almond milk
- ½ tablespoon chia seeds
- 1 teaspoon cinnamon
- 1 peach, diced
- ½ cup vanilla greek yogurt
- garnish: granola, peach slices
Instructions
- In a sealable container stir together the oats, almond milk, chia seeds and cinnamon. Put the mixture in the fridge overnight.
- In the morning stir in the fresh peaches and top with the greek yogurt.
- Garnish with additional Peach slices and granola.
