This breakfast version is healthy with low sugar, but big on taste. It's also gluten-free, and vegetarian, and includes an option to make it vegan below! - Vanilla Almond Milk: I like to use unsweetened vanilla almond milk for this but you can use your favorite kind of milk including dairy milk, soy milk, cashew milk, coconut milk, or even oat milk.
- Chia Seeds: Chia seeds plump up when soaked and are a great nutritional boost for these overnight oats. They have protein, fiber, omega-3 fatty acids and vitamins. You can also use hemp seeds or flax seeds.
- Greek Yogurt: Greek yogurt plumps up the soaked oatmeal, makes the overnight oatmeal creamy and adds lots of flavors. You can use either plain yogurt which would be the healthiest or flavored vanilla or banana.
- Peanut Butter: You'll need two tablespoons of peanut butter to add to the mixture to give it a nutty flavor.
- Coconut Flakes: Optional but fun!
