You can eat it anytime, but this recipe makes the perfect winter salsa or Christmas salsa because it's delightfully red and green for the holidays. This recipe is only 6 ingredients so you can throw this together in the flash. Plus you can make it ahead. You can't beat that during the busy holiday season.
Pomegranates are in season in December and it's the perfect time to enjoy this antioxidant-filled fruit. You can buy the little seeds or arils already separated from the fruit or buy the whole fruit and take them out yourself. All you do is cut around the outside of the fruit like an orange, place the pieces in water and watch the arils float to the top.
The sweet, rich and tangy flavor is perfect with the cool crisp cucumber, warm jalapeno, and fragrant cilantro. The salty and sweet combo is sheer perfection. It's also vegan, vegetarian, dairy-free, gluten-free and raw!

Here's an overview of what you'll need to make this Pomegranate Salsa, but keep scrolling for the full recipe amounts.
- Pomegranate Arils: You'll need about two cups of pomegranate arils which are the little red seeds inside. A large heavy pomegranate will have about 1 cup of pomegranate seeds in it. You can either buy whole pomegranate and remove the seeds yourself. I included directions on how to do that below, or you can make this a super easy recipe by buying the cups of pomegranate arils that have already been removed. They are sold in cups in the refrigerated section of the produce department. You can also find them here.
- Cucumber: I love adding fresh diced cucumber to the salsa for a crisp texture and flavor. It also gives the dish the festive red and green coloring.
- Red Onion: Salsa needs a bit of red onion to get that flavor your expect. If you don't like red onion you could use shallots or white onion.
- Jalapeno: You can customize how hot you want your salsa with how much jalapeno you put in the salsa. This recipe calls for 1 jalapeno with the seeds removed, which gives this a small amount of kick. To make it spicier, leave the seeds in and/or add more. You can also take out the spice completely by replacing the jalapeno with diced green bell peppers.
- Cilantro: Fresh cilantro is a key ingredient to any salsa, even winter ones. You can substitute parsley, but the flavor will be very different.
- Lime: Fresh lime juice brings it all together.
- Dippers: If you are serving this like a salsa, you'll need some sort of chips or crackers to serve it with. I like whole grain tortilla chips but you can use regular tortilla chips, crackers, pretzel chips or to toasted pita.
How to De-Seed a Pomegranate
My favorite way to de-seed a pomegranate or remove the arils is to get a big bowl of water. Cut the pomegranate in quarters and then under the water nudge the seeds out. The lighter skin you pull off will float to the top, and the seeds will sink. As you work, remover the pieces of skin from the top, leaving you with the seeds. It's still a bit of a tedious process which could take around 30 minutes, but the water helps separate things and keeps everything cleaner.

You could maybe try basil??? Start with less though and add more. It would totally change the flavor profile though.
If you wanted just a little color you could do parsley.... but cilantro is one of the key flavors so I can’t promise it would taste the same.
