My 3 Ingredient Pumpkin Nice Cream recipe is so easy to make and surprisingly tasty!
Hello! Hello!
When I created this recipe I thought I was going to write about being the type of person who has no problem eating ice cream or nice cream even with it's cold. I thought that would kind of explain my rationale for creating a icy dessert just as the weather was turning crisp. I love ice cream year round. Period.
But then the start of fall came and went and the mountains are still well into the 80's each day. So basically I've rethought this whole Pumpkin Nice Cream thing and really it's just about the perfect dessert for right now. Maybe I just had a hunch or something.
If you aren't' familiar with nice cream, it's basically blended fruit with added flavors to create a frozen dessert that gives you the feeling of eating ice cream without actually eating ice cream.
Not that I have anything against eating ice cream, trust me I do that too. But I think there is a time and place in life for both the "real" treats and the healthier versions like this.
Now you'd never believe when you eat this sweet pumpkin-y goodness that there are hidden bananas in there... but holy moly somehow it tastes like pumpkin pie. This whole recipe comes together with only THREE ingredients and no added sugar.
No joke.
And yes, it really does taste like pumpkin pie. Oh... and it just happens to be vegan, gluten free and all around magical. My Pumpkin Nice Cream recipe is a must try this fall.
So while I imagine the freakishly warm fall is not going to stick around forever, I firmly believe that this Pumpkin Nice Cream recipe should! It's just that good.

Hi there! It depends on the size of your banana but it should be about a cup. I hope you enjoy it!
