These Pumpkin Rice Krispie Treats might be the perfect fun fall treat. Made with just 5 ingredients - Rice Krispies, marshmallows, orange food dye, Rolo candies, and green M&' Ms - these adorable fall theme snacks will be the hit at any fall or Halloween party. They are shaped into adorable little pumpkins and are the perfect sweet treat. My boys were so excited to try them and I'm sure yours will be too!
You can leave the flavor in these plain, or add some pumpkin spice, to bring out the fall flavors. I've included both recipes below.
You really can't go wrong with this classic gooey marshmallow and rice krispie mixture, made fun and seasonal into a pumpkin! They look fancy, but only take a few minutes to throw together and form the pumpkin shape. You'll only need to stove-top here to melt the marshmallows, no oven required.

- Butter: You'll need ½ a stick of regular unsalted butter to help everything melt and stick together. I found salted butter threw off the taste a bit.
- Marshmallows: Traditional marshmallows work best for this. You can use large so your ratios of marshmallow to rice krispie are right. Make sure to use fresh marshmallows or they will not melt well.
- Rice Krispie: Either name-brand or store-brand crispy rice cereal will work.
- Orange Food Dye: I love this brand of food dye and this one makes the perfect orange color that looks like a pumpkin. You could mix red and yellow food coloring to get the orange, but it's so much easier to have this on hand and the color is just perfection.
- Toppings: I used and unwrapped chocolate Rolo candy and green mini M&M's for the pumpkin stem and leaf. You can also use a pretzel stick and green icing or cut tootsie roll and green fruit roll-ups cut into a leaf.
- Optional: These rice krispie treats taste like regular rice krispie treats, but if you want to add some pumpkin spice flavoring to the mix, you can! You can use my recipe for Homemade Pumpkin Pie Spice which is a blend of cinnamon, nutmeg, ginger, and cloves, or buy storebought.
Instructions:

- In a large pot over low heat, melt the butter. Don't turn the heat up too high or you will burn it. Also, keep an eye on it because you don't want to burn the butter.
- Add the marshmallows to the melted butter and stir until the marshmallows are completely melted. Watch it carefully and stir it so it doesn't burn, it's easy to do so you'll want to stay with the pan.
- If using the pumpkin spice, add it now.
- Remove the marshmallow mixture pan from the heat and the drops of orange food coloring until you reach the desired color and then add the rice krispie cereal. Mix until well combined.
- Divide the mixture 8 parts.
- Spray your hands with cooking spray so it doesn't stick.
- Using your hands form 8 balls and then slightly flatten them out. It's important to get them into that round shape, but don't over-press them or your rice krispie treat will turn out hard.
- While the mixture is still warm and pliable, add the rolo and green M&M to the top.
- Allow to cool and serve!
Variations
I love this Pumpkin Rice Krispie Treats recipe as written, but here are some fun variations.
- Make into Jack O Lanterns: Use black icing or candy to create Jack O lantern faces.
- Make them Mini: Divide the mixture into 12 parts and make mini-pumpkins. The rolo will probably be too big, but you can use a broken pretzel for the stem.
- Add other Candy: Other candies that can work for a face or stem are Red Hot Cinnamon Imperials, Tootsie Rolls, Licorice rope, candy corns, or Skittles. Get creative!
FAQ
Storage & Leftovers
Store any leftovers or the Pumpkin Rice Krispie treats at room temperature in an airtight container. They will keep for three to four days. If laying them, put parchment paper in between them.
Freezing
I would not freeze these Pumpkin Rice Krispie Treats as the taste and texture will not hold up to freezing and thawing.
Why did my Rice Krispie treats come out hard?
If you work the marshmallow rice krispie mixture too much, it will become hard. Do just what you need to do to form the balls, but don't overpress it.
What can I use instead of marshmallows in rice krispie?
If you are looking for a healthier choice than marshmallows or don't eat marshmallows because of the gelatin, you can use a combination of honey and peanut butter. You'll need 1 ½ cups of peanut butter and ¾ cup of honey or maple syrup to get enough sticky liquid to coat the 6 cups of rice krispie cereal.
