- Garlic Power: I like to use some extra garlic powder in my curry roasted cauliflower to bring out the rich flavors. Garlic power is a great way to evenly distribute garlic flavor on roasted veggies without having little bits of burnt cloves of garlic.
- Lemon: Fresh lemon brightens up the dish and brings out the flavors.

You can reheat it in the microwave, but it will not have the same texture. It will still taste good though. To replicate the crispy fresh roasted cauliflower, reheat it in the oven at 425 for 5-10 minutes until warmed through.
Can I make this ahead of time?
Yes, you can make this and reheat it for meal prep. If you are trying to make it ahead for guests, I'd cut the cauliflower and toss it into a ziplock bag with the olive oil, lemon juice, and spices. Store it in the fridge. When you are ready to serve it roast it fresh so it tastes the best. But you can save time by doing the prep work ahead of time!
Why does my roasted cauliflower get mushy?
You'll need to make sure your cauliflower is evenly spaced and uncrowded on the pan so it roasts and not steams. If it's crowded it will just steam.
Also cooking it at a high heat helps! Also don't overcook it, as it is best when it still has a bite of a bite for texture.

Ingredients
- 1 head cauliflower, cut into florets or 2 pounds of pre-cut cauliflower florets

- ½ lemon, juiced

Instructions

- Add the cauliflower florets on top and mix until well coated. You can allow it to marinate in the fridge for 1 hour, but it is not required.
- Pour cauliflower onto the baking sheet, making sure all the liquid is on the vegetables.
- Roast for 20-25 minutes or until crispy and tender.
