Tired of the same ole' side dish? Mix it up with my Roasted Parmesan Ranch Cauliflower!

I adore cauliflower. It might seem like a boring white vegetable, but it actually has a huge dose of vitamins including vitamin C... which is great to eat this time of year with the crazy flu going around. It's also easy to find and inexpensive even in winter when the produce department usually doesn't look quite as abundant... like right now.
If you haven't jumped on the cauliflower train yet, my Roasted Parmesan Ranch Cauliflower is a perfect way to start.

I used to boil my cauliflower, but then I learned about how that can actually reduce the vitamins in it. There is something about submerging it in boiling water that causes it to lose nutrients. Now I'll lightly steam it or even better roast it. Roasting really brings out all of the flavors and makes it taste amazing.
My Roasted Parmesan Ranch Cauliflower uses the same ranch spices I use my Homemade Greek Yogurt Ranch Dressing. You can leave it vegan, or add a touch of parmesan halfway through baking to get even more flavor.
To save time you can buy one of those pre-cut bags of cauliflower. Or it's pretty easy and less expensive to start from scratch using the entire head. I'll do both depending on my mood and time restrictions.
All you do to make this is toss the cauliflower florets in the olive oil and spices. Pop the seasoned veggie on a foil lined baking sheet and roast in a super hot oven so it will brown nicely.
The little bites brown up perfectly and taste amazing. The ranch seasoning is perfectly familiar and the small bit of salty, rich cheese makes this taste indulgent when it really isn't at all. In fact it's a dish you can feel good eating. Even the pickiest eaters will love this... especially when you tell them it's RANCH! If they need an extra dose of flavor have them dunk it in my Healthy Greek Yogurt Ranch Dressing.
Any way you try it, this Roasted Parmesan Ranch Cauliflower will totally change the way you think about cauliflower.

Roasted Parmesan Ranch Cauliflower
Ingredients
- 1 Cauliflower Head, cut in florets
- 2 teaspoons olive oil
- 1 teaspoon dried dill
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon dried parsley flakes
- ½ teaspoon thyme
- ¼ teaspoon salt, or to taste
- ¼ teaspoon pepper, or to taste
- ¼ cup parmesan
- cooking spray
- optional garnish: fresh parsley
Instructions
- Preheat the oven to 400 degrees.
- Toss the cauliflower, olive oil, spices, salt and pepper.
- Spray a baking sheet with cooking spray and put cauliflower on the sheet in a single layer.
- Bake for 15 minutes. Pull the pan out of the oven, flip the cauliflower and top with the parmesan cheese. Bake for an additional 10-15 minutes or until the cauliflower is tender.
- Garnish with fresh parsley.

Roasting veggies is my favorite way to eat them! I always seem to forget about cauliflower since the white doesn't seem to catch my eye in the color filled produce section. I'll definitely have to buy it to try this recipe out!

This looks great. I roast almost all of my veggies and cauliflower is a favorite . I normally just do mine with olive oil and a salt, pepper and garlic blend but this is another great alternative. Thanks!
