I had a nice, uneventful weekend at home. I did some shopping for dresses for upcoming baby showers, made some returns, organized some drawers, and watched some Netflix. I'm definitely starting to feel more and more pregnant and am needing slow down, even more, these days.
One of my pregnancy apps said that the babies can actually taste the foods I'm eating now and eating a variety of foods might help their taste buds be more accepting of flavors when they are actually eating themselves. Because of that, I've been trying to get as many different fruits and veggies in my diet as possible. Pregnant or not though, mixing up your diet is a great way to make sure you are getting different nutrients.
A simple quinoa salad recipe isn't new... in fact, I've made more than my fair share on Running in a Skirt... Meditteranean Quinoa Salad, Protein-Packed Asian Edamame Quinoa Salad, Honey Lime Berry Quinoa Salad, Caprese Quinoa Salad just to name a few! BUT it's such a great way to have a healthy make-ahead meal that is packed with all kinds of veggies I keep going back to it time and time again. This latest version has to be one of my favorites... cool cucumber, creamy avocado and salty feta combine for one dreamy combination. PLUS the entire thing comes together in less than 10 minutes!
How to Make this Simple Quinoa Salad Recipe
A simple quinoa salad recipe isn't rocket science. You simply cook your quinoa according to the package instructions. Next, you chop up your favorite veggies and add a light dressing. BUT the result tastes out of this world.
For this Cucumber Avocado and Feta Quinoa Salad, I used fresh cucumbers and herbs from my garden.
I loved all the GREEN color with both the herbs, avocado, and cucumber. The purple onion provides just enough contrast.
Plus there is something dreamy about avocado and feta together. It's a match made just to make your taste buds happy.
The dressing for this simple quinoa salad recipe is just a little bit of olive oil and red wine vinegar. I also juiced a lemon over it to get that bright citrus flavor.
If you are making a big batch to eat during the week just remember to add fresh avocado before serving it because it turns so easily. But otherwise, you have a simple 10 minute meal that is nourishing, satisfying and oh so tasty!

Cucumber Avocado and Feta Simple Quinoa Salad recipe
Ingredients
- 2 cups cucumber (3 mini or 1 large), sliced
- 2 cups cooked quinoa
- ½ cup red onion, diced
- ½ cup crumbled feta
- ½ cup fresh herbs - basil, oregano, chives, whatever is fresh
- 1 tablespoon red wine vinegar
- 1 tablespoon olive oil
- ½ lemon, juiced
- salt & pepper to taste
- 1 avocado, diced
Instructions
- Mix all the ingredients except the avocado in a bowl until well combined. Fold in the avocado at the end just before serving.

Mmmn cool as a cucumber here! These are delicious classic flavors all combined together. Quinoa is a great alternative when you're bored of rice.

I've been doing a lot of chickpea salads lately, but never considered branching out to quinoa! I'm also a fan of the avocado and feta combination, their flavors compliment each other so nicely.
Also, a little pregnancy anecdote. My mother hates fruits and veggies. HATES them. She hates the textures, she hates most the flavors, she just won't eat most anything that grows except for corn and potatoes and jarred tomato sauce, and maybe a couple of cooked fruits in desserts. However, the exceptions to this were her two pregnancies. With me, she says that all she wanted to eat was fresh fruit. On the other hand, and more unusual for her, she craved vegetables during her entire pregnancy with my younger sister. And she ended up with two kids who would probably happily live off of nothing but what she craved 🙂

We eat quinoa with stir fried vegetables. I cut up a bunch of onions, zucchini and yellow squash, lots of garlic, red onions and stir fry them. Then I add some low sodium soy sauce, a bit of chicken broth, onion and garlic powder and some ground pepper. I top it off with Shredded mixed taco cheese. It gets to be a nice thick gooey dish that we eat with quinoa. It is one of our favorite meals.

I've never tried quinoa but this looks delicious! Only thing I would have to eliminate due to a nasty food reaction would be the onion, sigh!
BTW when I was pregnant (ages ago--he turns 26 on Wednesday!) my biggest cravings were for healthy foods--including lots of 4 grain cereals--and I had no problem getting my baby to eat lots of healthy baby food veggies when he started solid foods. I "did" love the occasional chocolate ice cream with chocolate topping, however!
So thrilled for your progress; hang in there with the tired feelings tho. My exhaustion hit in my final trimester after a very easy first 6 months, and boy did I feel it! If your body is calling for it, get all the rest you can! Trust me, those precious twins will thank you!
