These Tuna Stuffed Peppers come together in less than 10 minutes with only FIVE simple ingredients you might already have sitting around. They are so simple yet SO tasty and make the absolute perfect meal if you are looking to lighten up your diet.
The idea for these Low Carb Tuna Melts came from one of my childhood favorite meals. My Mom would split a can of tuna on two slices of bread and then top it with super melty American cheese. She'd then broil it in the toaster oven until it was all melty and delicious. It was so crazy simple but something I loved. I still make my tuna melt that way sometimes but I was also looking for a more healthy, plant-forward, and low-carb way to enjoy the same flavors.
These Tuna Melt Mini Bell Peppers were born from that idea and I can't tell you how much I enjoy eating it for a FAST and healthy lunch. They start with a simpler version of my Greek Yogurt Tuna Salad and finish with melted cheese. I love that you can get a healthy dose of veggies and protein into such an easy meal that actually tastes really good and fills you up.

Here are the FIVE ingredients you'll need to make my Tuna Stuffed Peppers.
- Mini Bell Peppers: Look for coloring mini bell peppers in the produce aisle. They are often in a bag near the larger bell peppers. To prep, the peppers just wash them and slice them lengthwise. Then scoop out the membrane and seeds. If you can't find the mini bell peppers you can make this with large green bell peppers cut into wedges.
- Canned Tuna: I use a 5 ounce can of light tuna packed in water for this recipe. You can use whichever type you prefer including albacore or tuna packed in olive oil! You could even use the tuna that comes in the pouches. It's a pretty forgiving recipe to make the tuna melt stuffed peppers.
- Plain Greek Yogurt: Instead of using mayonnaise I use plain Greek yogurt to create my tuna salad base. It's a perfect light and healthy sub!
- Lemon: A nice squeeze of lemon is optional, but I love the bright flavor. Lemon adds so much dimension to food without any substantial fat or calories.
- Cheese: I made my Tuna Melt Mini Bell Peppers with shredded cheddar cheese but you can use whatever type you'd like including American, colby jack, mozzarella and more. You can also use sliced cheese cut into smaller pieces.
- Sea Salt & Black Pepper

- Preheat the oven to 400 degrees. Spray a baking sheet with cooking spray.
- Prep the mini peppers by cutting them in half length-wise. Scoop out any seeds or membranes inside. I wrote the recipe to use five mini peppers for ten Tuna Melt Mini Bell Peppers but the exact amount you'll have tuna stuffing for depends on how large they are. I like the smaller mini bell peppers for this!
- In a medium mixing bowl, stir and combine the canned tuna, greek yogurt, and salt and pepper. If you'd like, add a few drops of lemon juice to taste.
- Fill the pepper halves with the tuna mixture and put them on the baking sheet. Sprinkle them with shredded cheese or small cheese slices.
- Bake for 8-10 minutes or until the cheese is melted and the peppers are a bit tender.
- Garnish with optional fresh parsley, dill, or green onions.
- Serve immediately.
Variations & FAQ
- Make it Full Sized: Make this with a full-sized bell pepper by following the same instructions with one bell pepper. You'll need to bake the pepper for a bit longer though. It should take around 15 minutes but depends on the pepper size.
- Add More Flavors: You can add more flavors to your tuna mixture like Dijon mustard, garlic powder, olives, onion powder, or even chopped celery or red onions! If you like it in your tuna salad, it will work here.
- Make it Buffalo: Add some buffalo sauce to the tuna mixture.
- Make it Keto: Use mayo instead of Greek yogurt.
- Make it Dairy Free: Use mustard instead of Greek yogurt and dairy-free cheese.
- Serve them Crunchy: You can also serve this dish with just the tuna salad stuffed into the peppers! Don't bake them for a totally different crunchy snack or meal.
Should peppers be precooked before stuffing?
Larger, traditional bell peppers can be precooked before stuffing but these mini bell peppers don't need to be. They cook quickly in less than 10 minutes. No need to precook them.
How do I store leftovers?
Store any leftover in an airtight container in the fridge for up to five days.
Can you reheat tuna stuffed peppers?
YES! They taste best when reheated in the toaster oven or traditional oven but you can also pop them in the microwave for 20-second increments until warm.
Can I double or triple this recipe for a crowd?
Yes, I specifically wrote the recipe to work for one can of tuna to make a single meal but if you are making these to share and need more this recipe easily doubles or triples to make several dozen tuna stuffed peppers.
Can I make these for meal prep or make them ahead of time?
Yes! Just don't finish them for the best results. Make the tuna salad for the week ahead of time. You can also prep the peppers. When you are ready to eat them just stuff the peppers with the premade salad, add the cheese, and bake.
