A holiday treat you can feel good eating? My Vegan Peppermint Ice Cream (Chocolate Nice Cream) is just that!
Hi everyone!
Is there anything better than the chocolate peppermint combination this time of year? I really don't think so! It's one of my favorite things to eat during the entire month of December. I never tire of the flavor combo.
I've come up with a way for you to enjoy the festive flavors in a totally clean eating package. My Vegan Peppermint Ice Cream (Chocolate Nice Cream) is only 5 ingredients and will totally have you fooled.
Any guesses on what's in this? If you are thinking cream and sugar... you are wrong!
If you guessed bananas, you guessed right!
Now bear with me for a moment... you don't actually taste the bananas. They serve as a nice and creamy, healthy base for the chocolate-y peppermint-y goodness that I mix in.
You are just going to have to trust me on this one!
To make the Vegan Peppermint Ice Cream (Chocolate Nice Cream) you can use a food processor or one of my favorite healthy kitchen tools the Yonanas Frozen Ice Cream Maker. It turns fruit into frozen "ice cream."
The only ingredients in this are very ripe frozen bananas, almond milk, dark cocoa powder, vanilla extract and peppermint extract. That's IT! Choose a spotted ripe banana to get maximum sweetness from the fruit. I like to keep them in my freezer always so I'll have them on hand to make treats like this.
You can serve it in a bowl...
Or in a fun cone. These sugar cones aren't "clean" but are pretty satisfying and not too terrible for you. This looks like way more of an indulgence than it actually is!
Either way, this Vegan Peppermint Ice Cream (Chocolate Nice Cream) is almost too good to be true. Almost...

Clean Eating & Vegan Peppermint Nice Cream
Ingredients
- 4 medium bananas, frozen
- dash of unsweetened almond milk
- ¼ cup unsweeted cocoa powder
- 1 teaspoon pure vanilla extract
- 1-3 drops peppermint extract
Instructions
- In a food processor blend the bananas with a dash of almond milk. Add the cocoa powder and vanilla extract.
- Slowly add one drop of peppermint extract and use more if desired. It is very potent, so taste with one drop first!

Sounds tasty. And the flavor is perfect for this time of year, although I don't usually eat icecream when it's cold out. But then again is there ever a bad time for that?
