Rainbow Salad Recipe
St. Patrick's Day is TOMORROW and I wanted to guarantee you a big ole' rainbow on such a fun holiday. I can't promise you your own little leprechauns... but the rainbow... I can make that happen :-).
Now I know there is all sort of fun and debauchery that happens on this fabulous holiday but who says we can't rethink it a little with a healthy twist! My vegan Rainbow Salad recipe is the perfect place to start.
So I took the whole "eat the rainbow" thing very literally here, but I don't care. These colors and flavors have so many vitamins and nutrients I just can't handle it.
You'll most likely hit the health pot of gold (sorry, couldn't resist- lollll!!!) if you add this beaut to your diet.
The only trick for this salad is the carrot peels and you just use your regular ole peeler to make those. Just keep peeling past the skin to get the ribbons. It's my favorite way to eat carrots in a salad.
For the dressing for my vegan Rainbow Salad recipe, keep it light with my homemade Healthy Greek Salad Dressing. The flavors will allow all these fresh veggies to shine.
You can keep the kale fluffy or massage it with the dressing to break it up and make it tender.
And after you enjoy all this beautiful vegan Rainbow Salad recipe goodness... you can feel just a little better about all of the green beer!

Vegan Rainbow Salad
Ingredients
- 4 cups kale
- ½ cup cherry tomatoes, sliced
- 1 carrot, peeled into ribbons
- 2 snack sized yellow peppers, sliced
- ¼ cup purple cabbage, sliced
- 1 recipe Healthy Greek Salad Dressing **
- optional add ons: sunflower seeds, pumpkin seeds, chickpeas or avocado!
Instructions
- Divide the kale into two bowls.
- Top with the remaining ingredients as pictured.
- Serve with my Healthy Greek Salad Dressing!
