I hope you had an amazing Christmas weekend. The Hubs and I had a calm weekend at home, which is just what we wanted this year. It was lovely. However, I'm still feeling super festive today as Christmas week continues. Just ignore me if I start singing ALL THE CAROLS loudly and out of tune. 🙂
Even Rhett and Makena have been known to walk out of the room when I start singing.... but I digress.
As much as I'm feeling Christmas still today, I'm jumping ahead to New Years recipe-wise so you guys can have time to plan to make this Vegetarian Crock Pot Black Eyes Peas and Collard Greens Soup on New Year's Day. This is a recipe I have shared before, but I made some updates and know you will love it. It's the perfect way to kick off the year. In fact, all week I'll be sharing posts to help get you ready for 2017 so get ready for some New Year's fun, including healthy recipes ideas and resolution inspiration!
So back to that Vegetarian Crock Pot Black Eyes Peas and Collard Greens Soup recipe... I know I say this a lot... but trust me on this one. You'll want to make it!

So I'm not sure if this is just a southern thing or not, but Collards and Black Eyes Peas go hand in hand on New Year's Day. Story is that they bring good luck!
I need ALL the good luck I can get, so I normally make a batch for the big day.
One of my favorite ways to cook them is to mix it all together in a soup... vegetarian crock pot style of course!
My Vegetarian Crock Pot Black Eyes Peas and Collard Greens Soup is surprisingly flavorful and is a dish I love. Hopefully that means the luck will keep rolling in...
I feel like after a shaky 2016 I could use some luck.
My recipe uses dried peas, which can take a long to time soften in the Crock Pot. So if you are short on time, use canned black eyes peas or pre-soften the peas by soaking them overnight.
The combination of flavors are hearty and balanced. You can start the New Year off with a totally clean and easy meal. Plus it's just something really different to make in the Crock Pot. These are ingredients that are a little more unique.
The beans provide protein and the greens are vitamin packed. You could even consider this Vegetarian Crock Pot Black Eyes Peas and Collard Greens Soup a bit of a detox for the New Year.

Vegetarian Crock Pot Black Eyed Peas and Collard Greens Soup
Ingredients
- 1 sweet onion, diced
- 3 celery ribs, diced
- 1 small green pepper, diced
- 2 teaspoons minced garlic
- 2 cups dried black eyed peas, rinsed and sorted through **
- 2 32 ounce boxes of high quality vegetable broth
- 14.5 ounce canned diced tomatoes
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 2 bay leaves
- ¼ teaspoon cayenne, can adjust or omit
- ½-1 teaspoon salt & pepper, to taste
- 10 big collard leaves, stem removed and chopped
Instructions
- Rinse and sort through the peas removing any small pebbles or bad peas.
- Put everything EXCEPT the collards in the Crock Pot and stir well.
- Cook on low for 8 hours.
- Add collards and turn Crock Pot to high. Cook for an additional 2 hours or until peas are tender.

Five stars... I soaked the peas the night before with 1 teaspoon of apple cider vinegar, and cooked all day. Used mustard greens instead of collard greens. Amazing flavor and this time made the soup nice and thick.

Hi Meghan! I'm not familiar with cooking cabbage, but I'd just make sure the beans were tender and then add the cabbage until it's done!

I have this in my pot cooking right now, I'm very excited to try this for New Years 🙂
However I think you may have a typo in the ingredients. "1 4.5 ounce can diced tomatoes" surely you mean 1 14.5 ounce can? For this giant pot of soup, I couldn't imagine using only 4.5 ounce of tomatoes, and finding a 4.5oz can would be impossible 😉
Can't wait to try this though. It smells incredible so far!

I have always eaten a good luck New Years Day meal
with black eyes peas, collard greens and ham. Obviously
you wouldn't do the ham. The rest of the meal at my mom's
would be cole slaw and macaroni and cheese casserole
among other items. There would also be tasty desserts.

I love black eyed peas!! I actually just made hummus with them recently as we were out of chick peas. And they do mix really well with collards! We don't have a traditional dish we make on New Years per se, but this sounds like a good one!

I'm the weirdest Southerner ever. Love me collards and collards in soup, but I can't do black eyed peas. Probably because they are beans. Also I have an association with them and a restaurant called The Black Eyed Pea and an incident when I was a kid. I know, I'm weird.
