Baked Blackened Cod

This Blackened Cod recipe is baked instead of pan-seared making it a healthy, flavorful, and easy dinner.  Seasoned with Homemade Blackening Seasoning and bright lemon, this 15-minute, 4-ingredient dinner is fuss-free, simple, and delicious.

  • Preheat the oven to 425 degrees and spray a baking dish with cooking spray.
  • Pat the cod dry with paper towels. Put the fillets into the baking dish. Brush them with melted butter.
  • Generously sprinkle the fish with blackening seasoning.
  • Bake for 10-12 minutes or until the fish is opaque and flakes with a fork. Don't overcook it or it will dry out.
  • Squeeze with lemon and serve immediatly.

Notes

Storage & Leftovers
You can store any leftovers in the refrigerator for up to three days in an airtight container.  I think it's best enjoyed freshly cooked out of the oven, but it does keep.  To reheat it, put it in the microwave for about 1 minute.
