Cottage Cheese Banana Bread

Cottage Cheese Banana Bread is soft, moist, and downright delicious.  Made with cottage cheese instead of butter and oil, this banana bread gets a protein boost from cottage cheese and almond flour.  It's also gluten-free and made with maple syrup instead of refined sugar.

  • Preheat your oven to 350 degrees. Spray a loaf pan with cooking spray or line it with parchment paper.
  • In a food processer blend the cottage cheese until smooth. Add the eggs, maple syrup and vanilla to the food processer an mix together. Stir in the mashed banana by hand.
  • In a large bowl, mix together by hand the almond flour, cinnamon, nutmeg, baking soda and baking powder.
  • Add the cottage cheese and banana mixture to the flour bowl and mix until combined. Fold in the chocolate chips.
  • Pour the batter into a loaf pan. Bake for 45-50 minutes or until the center is cooked and toothpick comes out clean. Let cool at least 30 minutes before slicing.

Notes

Storage & Leftovers
Store any leftover wrapped and put in an airtight container on the counter at room temperature for three days.  If keeping longer than that, store in the fridge for up to five days.
Freezing
Freeze any leftovers in individual slices in an airtight container or a freezer-safe bag the freezer for up to three months.
